Chewy Oatmeal Chip Cookies Recipe

Ingredients
- 1 stk soft unsalted butter
- 3/4 c. Light brown sugar
- 1 x Egg
- 1 tsp Vanilla extract
- 3/4 c. All purpose flour
- 1/2 tsp Baking soda
- 1/2 tsp Grnd cinnamon
- 1/4 tsp Salt
- 1 1/2 c. Rolled oats (regular oatmeal)
- 1 c. Chocolate chips
- 1 c. Dark raisins (optional)
Directions
- Two cookie sheets or possibly jelly roll pans lined with parchment or possibly foil.
- Preheat the oven to 350 degrees and set the racks in the upper and lower thirds.
- Beat butter and sugar till mixed, then beat in egg and vanilla till smooth. Stir in flour, soda, cinnamon and salt. Stir in oatmeal, chips and optional raisins. Drop by Tbsp. on paper-lined cookie sheets. Bake about 10 min, till golden brown and still moist. Cold on pans and store in airtight container.
- Yield: 2 dozen large cookies
