  • 3 lb Pan-dressed smelts
  • 1/2 c. Lowfat milk
  • 1/2 tsp Salt
  • 1 1/2 c. Flavored bread crumbs
  • 1/4 c. Freshly grated Parmesan or possibly Romano cheese
  • 1/3 c. Melted butter Paprika

Directions

  1. Wash & dry fish. Combine lowfat milk & salt: combine bread crumbs & cheese.
  2. Dip fish in lowfat milk, roll in crumbs. Place fish in a single layer in well greased 15*10*1" baking dish; pour butter over fish & sprinkle liberally with paprika. Bake in 500 oven 8-10 min.
