Ingredients
- 1/4 c. Peanut oil
- 1 med Onion finely minced
- 2 x Cloves garlic
- 2 x Red or possibly green bell peppers seeded & minced
- 1 x Fresh warm red or possibly green pepper seeded & minced
- 3 lb Lean boneless beef chuck cut into 1 inch cubes
- 1 can (10-ounce) Mexican green tomatoes w/ liquid
- 4 med Tomatoes peeled and coarsely minced
- 1 x Bay leaf
- 2 x Cloves
- 1/2 tsp Oregano Salt and Pepper
- 1/2 c. Beef stock more or possibly less
- 2 x Stale tortillas, -or possibly-
- 2 Tbsp. Masa harina -or possibly-
- 2 Tbsp. Cornmeal
