  • 2 tsp oil [or possibly, 2 Tbsp. Butter]
  • 1 c. sliced mushrooms
  • 8 ounce cream cheese, softened [room temperature]
  • 1 tsp dry thyme
  • 1 tsp garlic salt [Or possibly, garlic pwdr or possibly Garlic Magic**]
  • 1 tsp dry oregano
  • 4 x boneless chicken breasts, pounded flat
  • 1/4 c. [dark] brown sugar
  • 1/4 c. minced pecans
  • 1/4 c. Dijon mustard
  • 1/3 c. minced fresh parsley

Directions

  1. Preheat oven to 350 degrees. In a small skillet, add in the oil [or possibly butter]. Saute/fry mushrooms till softened and set aside to cold.
  2. In a bowl, combine cream cheese, thyme, garlic salt [or possibly, garlic pwdr or possibly Garlic Magic] and oregano. Add in mushrooms and stir to combine.
  3. Lb. out each chicken breast till flat. Spread with equal parts of the filling and place seam-side down in a baking pan.
  4. In another bowl, mix the sugar, pecans, mustard and parsley. Spread mix on top of the chicken. Bake for 25 to 30 min.
  5. Preparation Time: 15 min
  6. Cooking Time: 30 min
  7. The chicken is wrapped around a savory creamy filling and sprinkled with a sweet and crunchy topping. Serve with fettuccine Alfredo.
