Ingredients

  • 6 x Cape whiting fillets
  • 1/4 c. Extra virgin olive oil
  • 1 lrg Minced onion
  • 2 x Minced garlic cloves
  • 1 can (16oz) tomatoes (minced With can juices)
  • 1 tsp Saffron threads
  • 2 c. Uncooked rice
  • 3 can (13 3/4oz ea) chicken broth
  • 1 pkt (10 ounce) peas Salt & pepper
  • 1 can (11 ounce) mandarin oranges Liquid removed
  • 1 jar (4oz) liquid removed & diced Pimiento

Directions

  1. Heat extra virgin olive oil in large skillet; saute/fry' onion & garlic till golden brown.
  2. Stir in tomatoes, saffron & rice; stir over low heat 5 min. Stir in chicken broth; simmer 10 min or possibly till rice is half cooked.
  3. Stir in peas & salt & pepper. Spoon rice & liquid into greased 2 qt casserole; set aside. Sprinkle fillets with salt & pepper; place, skin side down, on table & top with part of mandarin oranges & pimiento. Roll up fillets & place on rice in casserole, pushing rolls down into rice. Add in more oranges & sprinkle top with remaining pimiento. Cover & bake in 375 oven for 30-35 min, or possibly till rice is tender, & liquid is absorbed.
