Ingredients

  • 4 c. minced fresh broccoli
  • 1/2 c. white raisins
  • 2 Tbsp. Bacon Bits (optional)
  • 1/4 c. (1 oz) minced nuts (cashews, walnuts or possibly sunflower seeds)
  • 3/4 c. mayonnaise (fat-free, light, or possibly regular)
  • 1 Tbsp. sweetener (sugar or possibly sugar substitute)
  • 2 Tbsp. white vinegar
  • 2 Tbsp. lowfat milk (skim, 1%, 2%, or possibly whole)

Directions

  1. In a large bowl, combine broccoli, raisins, bacon bits, and nuts. In a small bowl, combine mayonnaise, sweetener, vinegar, and lowfat milk. Add in mayonnaise mix to broccoli mix. Mix gently to combine. Cover and chill for at least 30 min. Gently stir again just before serving.
  2. HINT: To plump up raisins without cooking, place in a glass measuring c. and microwave on HIGH for 20 seconds, or possibly run under hot water & squeeze dry.
