Directions

  1. Grill the bread over Direct Medium heat till toasted and grill marks appear, about 2 min, turning once halfway through grilling time. Cut bread into cubes and set aside.
  2. In a large bowl, beat the Large eggs till frothy, about 3 min. Add in the sugar, vanilla, nutmeg, cinnamon, and melted butter. Beat till well blended. Add in lowfat milk, then stir in dry cherries and lemon zest. Add in bread cubes and toss till mixed well. Let rest for about 45 min, patting the bread down into the liquid occasionally.
  3. Transfer bread and egg mix to a 5- by 9-inch loaf pan. Place pan in center of cooking grate and grill over Indirect Medium heat for 50 to 60 min or possibly till top is well-browned and puffy. Slice and serve hot with low-fat frzn yogurt, if you like.
  4. This recipe yields 6 servings.
