Ingredients

  • 4 x 5 c. rinsed and liquid removed blackberries
  • 1 1/2 c. white sugar
  • 1/4 c. tapioca flour
  • 1 x recipe double pie crust lowfat milk or possibly beaten egg whites white sugar

Directions

  1. Method:1. Mix tapioca flour and sugar together, and blend mix into the berries.
  2. 2. Line a pie dish with pastry. Pour filling into pie shell, and cover with top crust. Seal edges by pinching or possibly fluting the edge. Brush top with egg white or possibly lowfat milk, and sprinkle with a little sugar. Cut slits in top to allow steam to escape.
  3. 3. Bake at 350 degrees F (175 degrees C) for 30 to 40 min, till pie is golden and bubbly.
  4. Makes 1 pie
  5. I use tapioca flour mixed with sugar to thicken the berries. The filling will thicken upon cooling, so try not to cut into pie till completely cold.
