Ingredients
- Beet and Carrot Salad - Pots and Pins
- 3 raw beets, washed, peeled and shredded
- 6 raw carrots, washed, peeled and shredded
- 1 sweet onion, shredded
- 1/4 cup fresh basil leaves, finely chopped (or more if you really like basil)
- 1/3 cup Extra Virgin Olive Oil
- 4 tablespoons Balsamic vinegar
- salt and pepper to taste

.%20%20It%20had%20me%20at%20first%20bite%20and%20I%20knew%20I%20wanted%20to%20make%20it%20when%20I%20got%20home.%20%20I%20didn't%20know%20who%20brought%20the%20salad%20or%20exactly%20what%20was%20in%20it%20but%20after%20a%20quick%20on-line%20search%20I%20found%20dozens%20of%20recipes...I%20tried%20three%20of%20them...one%20called%20for%20ginger%20and%20poblano%20pepper%20flakes%20which%20I%20liked,%20but%20it%20was%20a%20bit%20hot!%20%20Another%20called%20for%20Dijon%20mustard%20and%20hazelnut%20oil...it%20was%20strange%20and%20even%20the%20disposal%20had%20a%20hard%20time%20choking%20it%20down.%20%20The%20third%20recipe%20called%20for%20rosemary,%20sage%20and%20thyme...and%20I%20really%20thought%20it%20would%20be%20the%20winner%20but%20alas,%20it%20tasted%20more%20like%20stuffing%20than%20salad.%20%20So...after%203%20attempts%20and%20learning%20a%20thing%20or%20two%20along%20the%20way,%20this%20is%20what%20I%20came%20up%20with.%20%20It's%20very%20refreshing%20and%20mild%20and%20I've%20eaten%20it%20for%20lunch%20and%20dinner%20for%20three%20days...you%20might%20even%20call%20this%20a%20Penance%20Salad...eat%20caramel,%20repent,%20then%20eat%20Beet%20and%20Carrot%20Salad,%20which%20washes%20away%20all%20caloric%20sins.%20%20Eat%20fudge,%20repent,%20then%20eat%20Beet%20and%20Carrot%20Salad...clean%20as%20a%20whistle!%20%20This%20ones%20a%20keeper!%3C/p%3E%3Cp%3EAfter%20shredding%20beets,%20carrots%20and%20onion,%20mix%20together%20in%20a%20large%20bowl.%20%20Stir%20in%20basil%20leaves.%20%20In%20a%20small%20bowl%20combine%20olive%20oil,%20vinegar,%20salt%20and%20pepper;%20mixing%20well%20to%20combine.%20%20Pour%20over%20beet%20mixture%20and%20toss%20to%20coat.%20%20Makes%208%20servings.%3C/p%3E%3Cp%3E%22I%20have%20tried%20to%20know%20absolutely%20nothing%20about%20a%20great%20many%20things,%20and%20I%20have%20succeeded%20fairly%20well.%22%20~%20Robert%20Benchley%3C/p%3E){kind=link}
