Beef Cucumber Curry Recipe

Ingredients

• 3 shallots, peeled and chopped
• 2 garlic cloves, peeled and chopped
• 1-inch piece of ginger, peeled and chooped
• 2 TBSP soy sauce
• 1 TBSP tomato paste
• 1/2 tsp ground black pepper
• 1/2 tsp ground coriander
• 1/2 tsp cayenne
• 1/2 tsp ground cumin
• zest and juice from 1 lime
• 2 pound boneless beef chuck roast, cut into 1-inch pieces
• salt & pepper
• 2 TBSP peanut oil
• 14-ounce can unsweetened coconut milk
• 1 large English cucumber, halved lengthwise and cut into 1/2-inch slices
• 1 yellow onion, cut into 1/2-inch pieces
• 1 1/2 cups uncooked jasmine rice
