Ingredients

  • 6 c. Vegetable oil
  • 4 x Idaho potatoes, peeled and cut into 1 /4-thick inch fries
  • 1 x Recipe BBQ Spice
  • 5 Tbsp. Hungarian paprika
  • 2 Tbsp. Old Bay Seasoning
  • 1 Tbsp. Chili pwdr, (pasilla negro or possibly habanero)
  • 2 Tbsp. Brown suagr
  • 1 tsp Cumin, grnd
  • 1 tsp Coriander, grnd
  • 1 tsp Thyme dry
  • 2 tsp Garlic pwdr
  • 2 tsp Onion pwdr
  • 3 Tbsp. Kosher salt

Directions

  1. In a heavy-bottomed pot, preheat the vegetable oil to 350 degrees.
  2. Add in the potatoes and fry till golden brown, about 5 to 7 min. Transfer the fries to a large bowl and toss with BBQ Spice. Serve.
  3. BBQ SPICE:Place all the ingredients in a food processor and pulse till everything is very well combined and almost pulverized.
  4. Sprinkle desired amount over warm French fries and toss well.
