Directions

  1. Measure first five ingredients into large bowl. Mix thoroughly and make a well in center. Beat egg till frothy. Fold in oil, lowfat milk and banana. Pour into well. Stir only to moisten. Batter will be lumpy. Fill greased muffin tins 3/4 full. Bake in 400 degree oven for 20 to 25 min.
  2. Yield 12 - 24muffins (depending on size).
