  • 4 x ripe bananas peeled, each cut into 4 pcs
  • 8 x thin slices light (reduced-fat) mixed-grai
  • 1/2 c. nonfat lowfat milk
  • 2 lrg Large eggs
  • 1 tsp vanilla extract
  • 1 pch grnd cinnamon Nonstick vegetable oil spray Powdered sugar
  • 8 lrg strawberries Pure maple syrup (optional)

Directions

  1. Preheat oven to 350 degrees. Place 4 pcs of banana on each of 4 bread slices; mash banana on bread. Top with remaining 4 bread slices. Whisk lowfat milk, Large eggs, vanilla extract and cinnamon in glass pie dish. Working in batches, dip bread in egg mix; let soak 45 seconds on each side.
  2. Spray large nonstick skillet with vegetable oil spray. Heat over medium heat. Working in batches, add in French toast to skillet and cook till golden brown, about 2 min per side. Transfer to baking sheet; bake 8 min.
  3. Transfer to plates. Dust with powdered sugar. Garnish with strawberries. Serve with maple syrup, if you like.
