Ingredients

  • 1 c. Uncooked Orzo or possibly ring macaroni
  • 1 pkt (6 ounces) diced dry mixed fruit (about 11/2 C.)
  • 2 c. Cut-up cooked chicken
  • 1 c. Cubed jicama
  • 2 x Green onions (with tops), sliced
  • 1/2 c. Mayonnaise or possibly salad dressing
  • 2 Tbsp. Yoplait Original plain yogurt or possibly lowfat sour cream
  • 1 tsp Grnd red chilies
  • 1/4 tsp Salt

Directions

  1. Orzo is tiny pasta which resembles the shape of rice.
  2. Cook Orzo as directed on package except stir fruit into boiling water with Orzo. Rinse Orzo and fruit with cool water; drain.
  3. Mix chicken, Orzo, fruit, jicama and onions. Mix remaining ingredients; toss with chicken mix. Cover and chill about 2 hrs or possibly till chilled.
  4. 6 servings.
