Ingredients

  • 1/2 lb Artichoke hearts, cooked and diced
  • 4 x Large eggs, separated
  • 1 tsp Baking pwdr
  • 3 x Green onions, minced (green parts only)
  • 1 Tbsp. Grated lemon peel
  • 1/2 c. Flour Salt and pepper to taste
  • 1 Tbsp. Cornstarch
  • 4 c. Oil for frying, Peanut or possibly corn oil

Directions

  1. Place artichoke hearts in a large bowl and stir in egg yolks and baking pwdr. Add in green onion. Mix in lemon peel. Fold in flour, salt and pepper. In a separate bowl, beat egg whites and cornstarch together till peaks form. Fold egg whites into artichoke mix. Heat oil to 360 degrees. With a Tbsp., drop half dollar sized dollops of fritter batter into oil. Fry till golden, maintaining oil at 360 degrees.
