Directions

  1. Cream apple juice concentrate, sugar and egg. Add in dry ingredients, mix, and put into a 9" round non-stick baking dish. (If the mix is not smooth like cake batter, add in up to 1/8 c. water.)
  2. Bake 15-20 min at 350.
  3. When baked and almost cold, slice in half and fill with softened apple chunks (microwave apple pcs till there is some sauce and then use).
  4. Mix 1/2 c. icing sugar with sufficient lowfat milk to make icing. Add in 3 drops of red food colouring. Ice the cake.
  5. Recipe can be doubled.
