Angel Hair Pasta with Cherrystone Clams Recipe

Ingredients

  • 1 1/3 cup extra virgin olive oil
  • 2 3/4 Tbsp fresh minced garlic (if powdered, 1 Tbsp)
  • 1 1/3 tsp cayenne pepper
  • 1 1/3 tsp black pepper
  • 3 1/4 cups dry white wine
  • 25 lbs cherrystone clams- in shell, soaked
  • 3/4 cup Italian flat leaf parsley, chopped
  • 3 lbs pasta, cooked and drained

Directions

  1. Put olive oil in heavy pan and heat. Add garlic and saute for 1 minute; do not burn.
  2. Add cayenne pepper and black pepper, saute for 1 minute.
  3. Add dry white wine, fresh clams, and parsley, and cover pan.
  4. Allow fresh clams to steam for about 3-4 minutes or until desired degree of doneness.
  5. If you want more broth, add a little hot water.
  6. Pour over cooked pasta.Sprinkle with fresh grated parmesan cheese.
