June 25, 2010Hi Julie, I’ve never commented on a Blog before, in fact, I just joined so I could comment on this particular recipe. I plan to use your lemon whipped cream frosting recipe for my husband’s birthday cake. I have already made a Gluten Free Angel Food cake (recipe from Gluten Free Mommy Blog) for his party tomorrow. I wanted to make a cake that our guests could enjoy and I think they will love it for the frosting – it sounds absolutely delightful. Thank you
.%3C/p%3E%3Cp%3EBut%20then%20there%20was%20Angel%20Food%20Cake.%20%20I'm%20not%20sure%20there%20is%20anything%20prettier,%20fluffier,%20or%20sweeter.%20%20I%20absolutely%20love%20the%20stuff.%20%20I%20think%20everyone%20has%20a%20favorite%20kind%20of%20cake%20(no?%20just%20me?%20%20really?)%20%20and%20my%20favorite%20has%20always%20been%20Angel%20Food.%3C/p%3E%3Cp%3EI%20was%20a%20bit%20surprised%20when%20I%20moved%20to%20Germany%20and%20realized%20(by%20doing%20an%20informal%20poll%20of%20my%20international%20group%20of%20friends)%20that%20Angel%20Food%20cake%20is%20pretty%20much%20an%20American%20thing.%20%20%20I%20knew%20I%20had%20to%20make%20some%20for%20my%20friends%20so%20they%20experience%20the%20sweet%20fluffy%20goodness%20,%20but%20-%20there%20being%20no%20angel%20food%20cake%20here%20and%20all%20-%20an%20angel%20food%20cake%20pan%20was%20impossible%20to%20find.%3C/p%3E%3Cp%3ELuckily%20my%20mom%20was%20awesome%20enough%20to%20send%20me%20one%20for%20my%20birthday%20and%20I%20promptly%20got%20to%20separating%20eggs,%20whipping%20eggs%20whites%20and%20sifting%20flour%20and%20sugar.%20%20I%20had%20made%20this%20before%20in%20the%20states,%20and%20I%20found%20this%20recipe%20to%20produce%20a%20far%20superior%20Angel%20Food%20cake%20to%20anything%20I%20had%20tried%20before.%20The%20first%20cake%20I%20made%20was%20a%20complete%20disaster%20though.%20%20See%20-%20I%20forgot%20the%20very%20important%20step%20of%20inverting%20the%20cake%20to%20cool%20and%20the%20cake%20lovingly%20became%20known%20as%20%22crater%20cake.%22%20%20%20%20Sure%20it%20tasted%20good...but%20it%20wasn't%20pretty.%3C/p%3E%3Cp%3ELuckily%20eggs%20aren't%20too%20expensive%20(even%20organic,%20free%20range%20ones%20'round%20here)%20and%20I%20didn't%20give%20up.%20%20And%20in%20the%20meantime%20I%20found%20myself%20with%20a%20very%20large%20number%20of%20egg%20yolks%20to%20put%20to%20good%20use%20in%20what%20has%20become%20my%20very%20favoritist%20frosting%20ever%20-%20Lemon%20Whipped%20Cream.%3C/p%3E%3Cp%3EIts%20really%20simple:%20%20take%20500g%20Whipped%20Cream%20(Schlag%20Sahne)%20and%20a%20scant%20amount%20of%20sugar%20and%20beat%20it%20with%20an%20electric%20mixer%20until%20its%20very%20stiff%20(careful....you%20go%20too%20long%20it%20will%20turn%20to%20butter).%20%20Then%20fold%20in%20a%20half%20cup%20to%20a%20cup%20of%20Lemon%20Curd%20(just%20to%20taste).%20%20I%20got%20this%20fantastic%20idea%20from%20Alice%20Waters%20in%20the%20Art%20of%20Simple%20Food,%20and%20this%20tart%20and%20not-too-sweet%20frosting%20just%20pairs%20magically%20with%20Angel%20Food%20Cake.%3C/p%3E%3Cp%3EI%20had%20never%20iced%20an%20Angel%20Food%20Cake%20before%20-%20I%20had%20always%20eaten%20it%20fairly%20plain,%20maybe%20with%20some%20berries%20or%20fruit%20compote%20and%20some%20whipped%20cream%20at%20the%20most.%20%20%20Iced,%20with%20some%20fresh%20raspberries%20and%20blueberries%20in%20the%20center%20for%20decoration,%20%20it%20was%20just%20amazing.%20%20The%20lemon%20and%20berries%20together%20with%20the%20sweet%20but%20low-fat%20cake%20seemed%20so%20summer-y%20-%20it%20was%20the%20ultimate%20dessert%20to%20enjoy%20after%20a%20backyard%20BBQ%20and%20I%20think%20would%20make%20an%20adorable%20take-along%20to%20a%20Fourth%20of%20July%20celebration.%3C/p%3E%3Cp%3ELet%20egg%20whites%20stand%20in%20large%20wide%20bowl%20at%20room%20temperature%20about%201%20hour%20before%20making%20cake.%20(They%20should%20be%20about%2060%C2%B0F,%20slightly%20below%20room%20temperature.)%3C/p%3E%3Cp%3ESet%20oven%20rack%20in%20lower%20third%20of%20oven%20and%20preheat%20oven%20to%20350%C2%B0F%20(180%20C)%3C/p%3E%3Cp%3ESift%20together%20confectioners%20sugar,%20flour,%20and%20salt%20onto%20a%20sheet%20of%20wax%20paper%20using%20a%20fine%20sieve%20(I%20just%20sifted%20into%20a%20bowl).%3C/p%3E%3Cp%3EBeat%20whites%20in%20mixer%20until%20frothy.%20Add%20cream%20of%20tartar%20and%20beat%20at%20medium%20speed%20until%20they%20form%20soft%20peaks.%20Add%20granulated%20sugar%20gradually,%20beating,%20and%20continue%20beating%20just%20until%20whites%20are%20thickened%20and%20form%20soft,%20droopy%20peaks.%20Beat%20in%20vanilla.%3C/p%3E%3Cp%3ESprinkle%20one%20fourth%20of%20sifted%20dry%20ingredients%20over%20whites%20and%20fold%20in%20with%20a%20rubber%20spatula%20gently%20but%20thoroughly.%20Fold%20in%20remaining%20dry%20ingredients,%20one%20third%20at%20a%20time.%3C/p%3E%3Cp%3EGently%20pour%20batter%20evenly%20into%20ungreased%20tube%20pan%20and%20bake%20until%20top%20is%20light%20golden,%20cake%20retracts%20a%20bit%20from%20pan%20and%20springs%20back%20when%20touched%20lightly,%20and%20a%20tester%20comes%20out%20clean,%2040%20to%2045%20minutes.%20Invert%20pan%20onto%20neck%20of%20an%20empty%20wine%20bottle%20or%20a%20large%20metal%20funnel%20and%20cool%20cake%20completely%20(mine%20didn't%20fit%20on%20either%20of%20those%20and%20I%20just%20set%20it%20inverted%20on%20a%20baking%20rack%20and%20that%20worked%20just%20fine).%3C/p%3E%3Cp%3ETo%20remove%20cake%20from%20pan,%20run%20tip%20of%20a%20long,%20narrow%20knife%20between%20outer%20edge%20of%20cake%20and%20pan.%20Tilt%20cake%20pan%20on%20its%20side%20and%20gently%20tap%20bottom%20edge%20against%20counter.%20Rotate%20pan,%20tapping%20and%20turning%20a%20few%20more%20times,%20until%20cake%20appears%20free.%20Cover%20pan%20with%20a%20metal%20rack%20or%20cardboard%20round%20(or%20dinner%20plate%20as%20I%20did)%20and%20invert,%20tapping%20pan%20firmly%20to%20loosen%20cake.%20Lift%20pan%20from%20cake.%20(It%20should%20come%20out%20beautifully,%20like%20a%20pillow%20taken%20out%20of%20a%20slipcover.)%3C/p%3E%3Cp%3ETo%20frost,%20simply%20gently%20spread%20the%20icing%20in%20large%20heaping%20spoonfuls%20with%20a%20rubber%20spatula.%20%20Since%20I%20used%20a%20thick%20coating%20of%20frosting%20I%20didn't%20see%20any%20need%20to%20do%20a%20crumb%20coat%20and%20the%20whole%20bit.%20%20Frost%20around%20the%20whole%20cake%20including%20in%20the%20center%20hole.%20%20I%20think%20this%20cake%20looks%20cute%20with%20the%20frosting%20kind%20of%20fluffy%20and%20'rustic%20looking'%20but%20feel%20free%20to%20make%20yours%20all%20smooth%20and%20pretty%20with%20a%20cake%20spreader%20if%20that%20is%20your%20thing.%20%20%20Keep%20the%20cake%20in%20the%20fridge%20until%20serving.%20%20Fill%20the%20center%20with%20fresh%20berries%20-%20I%20used%20raspberries%20and%20blueberries%20-%20but%20I%20can't%20think%20of%20%20a%20single%20berry%20that%20wouldn't%20taste%20great%20with%20this.%20%20Strawberries%20are%20especially%20awesome.%3C/p%3E){kind=link}
