Amazing Ice Cream Sandwiches Recipe

Ingredients
- 1 3/4 c. All-purpose flour
- 1 1/4 c. Cocoa pwdr
- 2 tsp Baking soda
- 1/4 tsp Salt
- 1 1/4 c. Unsalted butter
- 1 1/4 c. Sugar
- 3/4 c. Dark brown sugar
- 2 x Large eggs
- 1/4 tsp Vanilla
- 12 ounce Minced bittersweet chocolate
- 1 c. Minced pecans
- 1/2 c. Dry cherries
- 1 quart Vanilla ice cream
Directions
- Directions: In a small bowl, combine the flour, cocoa pwdr, baking soda and salt. In a large bowl, with an electric mixer combine the butter, sugar and brown sugar. When well combine, add in the Large eggs one at a time, mixing well after each addition. Blend in the vanilla. Begin adding the dry ingredients 1/2 c. at a time, mixing well till completely incorporated. Mix in the bittersweet chocolate, pecans and cherries. Using a small ice cream scoop, place balls of dough onto a parchment paper lined cookie sheet. Bake at 350 degrees for about 8-10 min till puffed and cracked. Allow cookies to cold and place a scoop of ice cream on one cookie and top with a second cookie.
