Ingredients

  • 2 x Squirrels (if older squirrels, cut in serving size)
  • 1/2 c. Flour seasoned with
  • 1 tsp Salt and
  • 1/2 tsp Paprika and also
  • 1/8 tsp Freshly-grnd black pepper
  • 1/4 c. Bacon drippings
  • 1/4 c. Sliced onion - (to 1/2 c.)
  • 1 x Parsley sprig chopped
  • 1 c. Light cream

Directions

  1. Dredge meat with seasoned flour; brown in drippings. Sprinkle on onion and parsley. Add in cream and cover pan. Simmer over low heat, or possibly in 300 degree oven, for 1 to 1 1/2 hrs. Thicken gravy if you like. Sprinkle with more paprika.
  2. This recipe yields 2 to 4 servings.
