A Grapevine Grows in Brooklyn – Sweet, Sticky Grape and Walnut Flatbread Recipe
Ingredients
- Sticky Grape and Walnut Flatbread (from The Flavors of Tuscany by Maxine Clark)
- 8 oz. black grapes, seeded (Sangiovese wine grapes, if possible, or, like we had on hand, Catawba grapes)
- jelly roll pan
- Yeast Dough
- 1 oz fresh yeast of 1 envelope fast action-dried yeast
- a pinch of sugar
- 3 3/4 cups of all purpose flour plus extra for dusting
- 2 egg yolks
- 2 tablespoons olive oil
- 1/2 teaspoon sea salt
- Walnut Butter
- 11 tablespoons butter, softened
- 2/3 cup demerara sugar, plus extra for diving
- finely grated zest of 1 unwaxed lemon
- 1/2 cup walnuts, chopped

%20%E2%80%93%20guess%20who%E2%80%99s%20back?%20Yes,%20I%20am%20still%20alive.%20Yes,%20Jonny%20has%20been%20keeping%20this%20blog%20afloat%20for%20a%20year%20now.%20And%20yes,%20I%20am%20ready%20to%20try%20to%20blog%20again.%20After%20a%20year%20of%20figuring%20out%20how%20to%20be%20a%20parent%20(and%20how%20to%20be%20comfortable%20being%20a%20mom%20and%20finally%20coming%20to%20terms%20with%20the%20fact%20that%20my%20life%20will%20never,%20ever%20be%20the%20same%20again)%20and%20learning%20to%20balance%20everything%20that%20comes%20with%20this%20new,%20crazy%20world,%20I%20finally%20feel%20like%20I%20want%20to%20write%20again.%20And%20what%20could%20be%20better%20to%20write%20about%20than%20the%20grapevine%20that%20not%20only%20GREW%20in%20the%20soil%20of%20our%20Brooklyn,%20NY,%20yard%20but%20even%20FLOURISHED%20and%20provided%20over%2020%20lbs%20of%20sweet,%20delicious%20Catawba%20grapes?%3C/p%3E%3Cp%3EMany%20of%20you%20may%20have%20never%20heard%20of%20Catawba%20grapes%20before%20and%20until%20researching%20how%20to%20use%20the%20grapes%20for%20jam,%20neither%20had%20I.%20One%20factoid%20I%20did%20learn%20is%20that%20it%20is%20a%20native%20grape,%20discovered%20in%201802,%20mostly%20an%20east%20coast%20varietal%20and%20is%20used%20to%20produce%20some%20wine.%20I%20was%20amazed%20at%20how%20incredibly%20sweet%20the%20grapes%20were%20and%20figured%20the%20wine%20made%20from%20them%20would%20probably%20be%20some%20sort%20of%20dessert%20wine.%20In%20fact,%20the%20Catawba%20grape%20is%20responsible%20for%20the%20first%20American%20sparkling%20wine.%20I%20thought%20it%20was%20pretty%20cool%20to%20know%20that%20little%20old%20USA%20has%20native%20wine-growing%20grapes%20(in%20fact,%20there%20are%20about%20four%20types%20of%20native%20grapes).%20In%20the%20mid%201800%E2%80%B2s,%20Catawba%20sparkling%20wine%20was%20even%20lauded%20by%20many%20experts%20in%20Europe%20(one%20person%20shockingly%20wrote%20it%20was%20better%20than%20anything%20that%20came%20from%20the%20Rhine!).%20The%20Finger%20Lakes%20region%20in%20upstate%20New%20York%20still%20uses%20this%20varietal%20to%20make%20much%20of%20the%20wine%20produced%20there.%3C/p%3E%3Cp%3EAs%20you%E2%80%99ve%20probably%20read%20in%20earlier%20posts,%20our%20garden%20bounty%20has%20been%20enormous%20this%20year%20and%20our%20two%20grapevines%20growing%20against%20a%20beautiful%20Brooklyn%20chain-link%20fence%20did%20not%20disappoint.%20Never%20having%20worked%20with%20home-grown%20grapes%20before,%20I%20realized%20that%20they%20could%20be%20used%20to%20make%20delicious%20jam.%20After%20de-skinning%20(by%20hand!)%204%20pounds%20of%20them%20and%20making%205%20jars%20of%20delicious%20grape%20jam,%20I%20needed%20something%20else.%20We%20found%20this%20wonderful%20recipe%20for%20a%20sweet%20flatbread%20in%20a%20Tuscan%20cookbook%20and%20I%20knew%20that%20I%20had%20to%20have%20it.%20It%20was%20incredibly%20easy%20to%20make%20and%20worked%20well%20with%20our%20morning%20espresso.%3C/p%3E%3Cp%3EIf%20using%20fresh%20yeast,%20mix%20with%20sugar%20in%20medium%20bowl,%20then%20whisk%20in%201%20cup%20of%20warm%20water.%20Set%20aside%20for%2010%20minutes%20until%20frothy.%20For%20dried%20yeasts,%20use%20according%20to%20the%20manufacturers%20instructions.%3C/p%3E%3Cp%3ETo%20make%20the%20yeast%20dough,%20sift%20the%20flour%20into%20a%20large%20bowl%20and%20make%20a%20well%20in%20the%20middle.%20Pour%20in%20the%20yeast%20mixture%20along%20with%20the%20egg%20yolks,%20olive%20oil%20and%20salt.%20Mix%20together%20until%20the%20dough%20comes%20together.%20Top%20out%20onto%20a%20lightly%20floured%20surface.%20Knead%20for%2010%20minutes%20until%20dough%20is%20smooth%20and%20elastic.%20The%20dough%20should%20be%20soft%20but%20not%20too%20soft.%20If%20it%20gets%20too%20soft,%20add%20a%20bit%20more%20flour%20and%20knead.%20Place%20in%20a%20clean,%20oiled%20bowl,%20cover%20with%20a%20damp%20kitchen%20towel%20and%20let%20rise%20until%20doubled%20in%20size%20%E2%80%93%20about%201%20hour.%3C/p%3E%3Cp%3EMeanwhile,%20make%20the%20walnut%20butter%20by%20creaming%20the%20butter%20and%20sugar%20together%20with%20the%20lemon%20zest,%20then%20stir%20in%20the%20walnuts.%20Keep%20at%20room%20temperature.%3C/p%3E%3Cp%3EWhen%20the%20dough%20has%20risen,%20knock%20the%20doughin%20the%20middle.%20Shape%20into%20a%20ball,%20flatten%20and%20roll%20out%20into%20a%20rectangle%20to%20line%20the%20jelly%20roll%20pan.%20Line%20the%20the%20jelly%20roll%20pan%20with%20the%20dough%20and%20then%20spread%20with%20the%20walnut%20butter.%20Top%20with%20grapes%20and%20dust%20with%20some%20sugar.%20Cover%20with%20a%20damp%20cloth%20and%20leave%20it%20to%20rise%20another%20hour%20or%20until%20puffy%20and%20doubled%20in%20size.%3C/p%3E%3Cp%3EUncover%20and%20bake%20in%20the%20oven%20at%20400%20degrees%20for%2015%20minutes%20then%20turn%20it%20down%20to%20350%20and%20bake%20for%20another%2020%20minutes%20or%20until%20well%20risen%20and%20golden%20brown.%20Allow%20to%20cool%20slightly%20before%20cutting%20into%20it!%20Serve%20w
