Sauteed Zucchini in Homemade Tomato SauceI love homemade tomato sauce, it's so much better than jarred sauce. As a summer side dish I add sauteed zucchini, it's so yummy. I recently served it as a side with baked cod and we wound up putting it right over the fish it was terrific! |

Baked CabbageBeing Irish I grew up eating cabbage and ham, I love Cabbage. But we always had it plain, or in colcannon. In Lancaster Pa (Amish country) at Millers Restaurant I had Baked Cabbage and it was wonderful! I couldn't wait to make it at home. |

Savory Creole Sweet Potato CasseroleNo sweet topping here - this has breadcrumbs & bacon and the Creole twist of Jamaican Pickapeppa Sauce in the yams. Cucumber & Tomato CondimentThis is a very finely-minced salad-condiment commonly found in the northern mountains of Morocco. It is eaten with roast meats and substantial meat dishes. Most Moroccan salads benefit from a bit of quiet time so the flavors can integrate and the aromas build. This is very tasty as a topping for hamburgers, and can even be a dip,… |
