I actually learned how to cook late in life. I grew up in a Mexican foodie household and could never get a handle on what my Mom was creating in the kitchen. I remember asking her to show me how to make a simple thing like rice. My poor brain could not handle that she would add a bit of this or touch of that because my mind liked and wanted to use exact quantities/measurements. Alright, so I was really a baker at heart... Right? I wanted to control every aspect of the process down to specific measurements. A baker. Lo and behold, I have since met my fiancé and it is certainly a rapid fire Cook's mentality that prevails now. Well, sort of. I love his free form sense with spices and natural foods that he can whip together at will. I have left my 'baker's' sensibility due to him. Happy to say, I can now recreate my Mom's Mexican rice whether using brown or white and it is definitely a freeing experience. My only hold up is that although the fiancé may like to cook quickly, I was definitely brought up to take it slow, respect the process and enjoy every smell, every additional detail that does indeed become the whole cooking and subsequently... eating experience. I will always want to bake because of my own need to respect what has come before, but cooking is truly where it's at!
