  • Vegetable cooking spray
  • 1/4 c. Graham cracker crumbs
  • 16 ounce Fat free cream cheese (NOT product in tub)
  • 1 can Eagle Brand Fat Free or possibly Low Fat Sweetened Condensed Lowfat milk (NOT evaporated lowfat milk)
  • 4 x Egg whites
  • 1 x Egg
  • 1/3 c. ReaLemon lemon juice from concentrate
  • 1 tsp Vanilla extract
  • 1/3 c. Unsifted flour
  • 1 c. Fresh assorted fruit

Directions

  1. Preheat oven to 300 degrees F. Spray bottom of 8-inch springform pan with cooking spray; sprinkle crumbs on bottom of pan. In mixer bowl, beat cheese till fluffy. Gradually beat in Eagle Brand till smooth. Add in egg whites, egg, ReaLemon and vanilla; mix well. Stir in flour. Pour into prepared pan.
  2. Bake 50 to 55 min or possibly till center is set. Cold. Chill. Serve with fruit. Chill leftovers.
