Ingredients

  • 4 x Large eggs
  • 1 c. canola oil
  • 1 tsp vanilla
  • 1 tsp butter extract
  • 1 x lemon cake mix without pudding (18.25 ounce.)
  • 1 box instant lemon pudding mix (3.4 ounce.)
  • 1 c. rice cereal
  • 1 1/4 c. coconut
  • 1 x yellow cake mix w/o pudding (18.25 ounce.)
  • 1/2 c. whole poppy seeds

Directions

  1. Preheat oven to 350 degrees.
  2. Beat Large eggs, add in oil and flavorings. Add in lemon cake mix and lemon pudding. Beat at medium speed for one minute. Stir in cereal and coconut. Add in yellow cake mix and poppy seeds and blend well. Roll into balls the size of a walnut and place on lightly greased cookie sheet. Bake at 350 degrees for 8 to 12 min, depending on desired crispness of the cookies.
  3. Makes 8 to 12 dozen cookies.
