Squash Casserole by Kerri BishopThis casserole is very similar to the one at Boston Market. It is not calorie light, but it is great for special occasions. We have had many requests for this recipe. This recipe is easily halved. |

Cauliflower in Cast Iron Pot by Jeremy FoxThis dish can be used as a main or a side - would also be a great item to take to a party or a pot luck. Your friends won't be disappointed. If you can, use locally grown and organic cauliflower. You'll taste the difference. |

Spinach Balls by GlennFound this on the web at mydailymoment.com and decided to give it a try since I love spinach. It was easy to prepare but I don't think I got the spinach fully defrosted and "squeezed dry." I overcooked them by at least 10 minutes and they never did get bound together tight. I think it was the water so I have not yet modified the… |

Scalloped Corn and Tomatoes by GlennWestinghouse and Pennsylvania Power and Light Co. put out a cookbook to sell their new electric range and oven in the 1930s. This is one of the recipes made to stand alone. The original small book has 7 menus with a meat, side and desert that were designed to be baked together in the same oven. It relies heavily on canned foods and… |

Squash Caserole by Kerri BishopThis recipe is very close to Boston Market's squash casserole. We have always loved this side at the restaurant, but they only have it during the holidays. We made this for Christmas and everyone raved about it. It is really easy to halve the recipe. We have had lots of requests for this recipe. I'd be willing to bet you'll love… |

Corn Pie for Lazy Cooks by GlennI LOVE corn pie. But I don't always have time to do it like grandma used to make it. This won't win any awards but it is a very acceptable corn pie to please the palate. A super side dish. |

Dave’s Rutabaga Soufflé by DaveI serve this dish at Thanksgiving, Christmas and Easter. It is always a huge hit. The addition of mascarpone cheese was just done at Easter and it really makes it. It also allowed me to reduce the amount of cream so even better. This is an easy level recipe that I hope you enjoy! |

Maple Sweet Potato & Cabbage by NikkiiGeThis will be a new tradition at our family get togethers. I wasn't sure about the sweet potato and cabbage combo, but, I wanted to cook a dish including cabbage, as crucifious vegetables are the best anti cancer food group. This group includes all cabbages, kale, brussel sprouts, broccali, and cauliflower. It turned out to be a… |

Spinach & Artichoke Cassarole by LIsaA great side dish with that does double duty. Leftovers make a great spinach Artichoke dip when you add creme cheese and reheat. Use real butter but low fat subs are fine otherwise. Shaker Parmesan is also fine for this recipe. |
