%20food%20--%20looks%20great%20when%20it's%20freshly%20picked!%20-%20Photos%20by%20Wasabi%20PrimeI%20actually%20like%20green%20tomatoes,%20and%20not%20just%20for%20an%20excuse%20to%20watch%20that%20charming,%20yet%20surprisingly%20disturbing%20movie,%20Fried%20Green%20Tomatoes.%20Green%20tomatoes%20are%20tart%20and%20have%20a%20unique%20flavor%20all%20their%20own,%20so%20I%20like%20roasting%20them%20with%20an%20onion%20and%20blending%20it%20all%20into%20a%20sauce,%20usually%20salsa.%20I%20combine%20this%20with%20other%20green%20foods%20like%20cilantro,%20lime%20zest%20and%20juice,%20and%20season%20it%20with%20a%20lot%20of%20cumin%20and%20chili%20powder.%20Everything%20goes%20into%20the%20blender,%20I%20love%20it%20--%20no%20fuss,%20no%20muss,%20and%20there's%20enough%20liquid%20from%20the%20roasted%20vegetables%20and%20a%20lime%20or%20two,%20to%20get%20everything%20blended%20to%20a%20smooth%20consistency.%20Shazam.%3C/p%3E%3Cp%3EI%20did%20this%20with%20ripe%20tomatoes%20as%20well,%20which%20I%20have%20to%20say,%20the%20studies%20about%20certain%20colors%20like%20red,%20yellow%20or%20orange%20being%20more%20enticing%20to%20the%20appetite%20is%20totally%20right.%20It's%20basically%20the%20same%20salsa%20ingredients,%20just%20red%20tomatoes%20versus%20green%20ones,%20but%20the%20red%20salsa%20looks%20exponentially%20better.%20I%20made%20this%20with%20ripe%20tomatoes%20kindly%20given%20from%20another%20person's%20garden,%20one%20who%20is%20not%20as%20blessed/cursed%20with%20green%20tomatoes%20as%20myself.%20I%20added%20some%20of%20my%20own%20ripe%20tomatoes%20to%20the%20great%20vegetable%20roasting,%20as%20well%20as%20some%20tomatillos%20for%20tartness,%20as%20I%20didn't%20have%20fresh%20lime.%20A%20very%20tasty%20salsa,%20enjoyed%20warm%20or%20cold,%20I%20pretty%20much%20ate%20one%20jar's%20worth%20all%20on%20my%20own%20before%20eventually%20sharing%20the%20other%20jar%20with%20friends.%3C/p%3E%3Cp%3ELet's%20face%20it,%20red%20salsa%20just%20looks%20better%20-%20Photos%20by%20Wasabi%20primeI%20found%20myself%20with%20a%20couple%20of%20pounds'%20worth%20of%20green%20tomatoes%20towards%20the%20end%20of%20the%20season,%20so%20I%20repeated%20the%20salsa%20recipe%20and%20wound%20up%20with%20a%20pretty%20pesto-like%20mixture.%20I%20even%20threw%20in%20some%20roasted/peeled%20hatch%20chiles.%20But%20I%20didn't%20want%20to%20push%20myself%20along%20that%20same%20dark%20alleyway%20of%20me%20on%20the%20couch%20with%20a%20bag%20of%20tortilla%20chips%20and%20a%20big%20bowl%20of%20salsa%20for%20dinner%20the%20next%20few%20nights,%20so%20I%20thought:%20Green%20Enchiladas.%20In%20my%20mind,%20I%20envisioned%20enchiladas%20filled%20with%20chicken,%20the%20last%20of%20our%20garden's%20yellow%20squash%20and%20ricotta,%20to%20give%20it%20an%20extra%20creamy%20texture.%20I%20enriched%20the%20salsa%20verde%20with%20some%20Mexican%20crema,%20and%20that%20gave%20it%20a%20smooth,%20velvety%20texture%20to%20coat%20all%20the%20filled%20tortillas%20before%20baking.%20I%20covered%20everything%20with%20crumbled%20cotija%20cheese%20and%20into%20the%20oven%20these%20enchiladas%20went.From%20green...%20to%20baby%20poop,%20but%20damn,%20it%20tasted%20good!%20-%20Photos%20by%20Wasabi%20PrimeAnd...%20baby%20poop.%20Heat%20just%20kills%20the%20fresh%20colors%20of%20food,%20especially%20green%20things,%20there's%20not%20a%20lot%20you%20can%20do%20about%20it.%20I%20remember%20buying%20crazy%20multi-colored%20bell%20peppers,%20and%20making%20the%20mistake%20of%20putting%20them%20into%20a%20stir%20fry%20and%20they%20turned%20dirty%20brown,%20even%20though%20they%20tasted%20fine.%20Not%20even%20a%20sprinkling%20of%20fresh%20cilantro%20or%20extra%20cheese%20was%20going%20to%20save%20these%20enchiladas.%20So%20why%20even%20bother%20posting?%20Aside%20from%20the%20fact%20that%20I%20love%20the%20idea%20of%20cooking%20stuff%20grown%20in%20our%20garden,%20and%20as%20super-grody%20as%20these%20enchiladas%20looked%20on%20the%20plate%20--%20they%20were%20probably%20the%20best%20enchiladas%20I'd%20ever%20made!%20Doesn't%20that%20just%20kill%20you%20when%20that%20happens?%20What%20resembles%20little%20Junior's%20explosive%20diaper%20accident,%20was%20freakin'%20delicious.%20But%20the%20photos%20will%20never%20do%20it%20justice.%20Mixing%20ricotta%20with%20cooked%20chicken%20and%20vegetables,%20spicing%20it%20with%20some%20cayenne%20and%20cumin,%20makes%20for%20a%20wonderfully%20smooth%20enchilada%20filling.%20Think%20of%20a%20hybrid%20between%20Italian%20stuffed%20pasta%20and%20a%20typical%20enchilada.%20The%20ricotta%20and%20a%20light%20seasoning%20keeps%20it%20mild,%20which%20makes%20me%20think%20a%20typical%20red%20enchilada%20sauce%20would%20be%20overwhelming.%20The%20baby%20poop%20green%20sauce%20was%20citrusy,%20fresh,%20but%20rich%20from%20the%20combining%20of%20the%20crema.%20The%20night%20I%20made%20this,%20I%20had%20double%20servings,%20I%20loved%20it%20so%20much.%20I%20probably%20ate%20it%20so%20fast,%20I%20barely%20noticed%20the%20fact%20that%20it%20looked%20like%20hell.%3C/p%3E%3Cp%3EI'm%20in%20love!%20But%20the%20object%20of%20my%20affection%20is%20ugly%20as%20sin%20and%20likely%20something%20you'd%20courtesy-flush%20before%20eating.%20So%20therein%20lies%20my%20food-quandary.%20I%20will%20definitely%20make%20this%20again,%20but%20it's%20a%20%22Just%20Us,%22%20dinner,%20as%20the%20Mister%20had%20no%20qualms%20about%20eating%20Salsa%20Verde%20Turdy%20Enchiladas%20--%20he%20pretty%20much%20bypassed%20all%20other%20leftovers%20for%20this%20green%20monstrosity.%20But%20take%20my%20Beauty%20and%20the%20Feast%20advice:%20even%20the%20ugliest%20of%20meals%20can%20still%20make%20your%20tummy%20very%20happy,%20even%20if%20your%20food%20blogger%20aesthetic%20is%20like,%20what-the-what?!%3C/p%3E){kind=link}
