Ingredients

  • 1 1/2 lb lean grnd beef
  • 2 tsp butter
  • 1/2 c. finely minced onion
  • 8 ounce assorted wild or possibly button mushrooms, sliced
  • 3 x cloves garlic, crushed
  • 3/4 c. soft breadcrumbs
  • 1 x egg, slightly beaten
  • 1 tsp salt
  • 3/4 tsp dry thyme leaves, crushed
  • 1/4 tsp pepper
  • 1 tsp butter
  • 1/2 c. diced red, yellow or possibly green bell pepper
  • 1 jar (12 ounces) beef gravy
  • 1/2 tsp dry thyme leaves, crushed
  •     Heat oven to 350 degrees.

Directions

  1. In a large nonstick skillet, heat 2 tsp. butter over medium heat till warm. Add in onion. Cook and stir 3 min. Add in mushrooms and garlic. Cook and stir 8 min or possibly till mushrooms are tender.
  2. Remove from heat; cold 5 min.
  3. In large bowl, combine grnd beef, bread crumbs, egg, salt, 3/4 tsp. thyme, pepper and mushroom mix; mix lightly but thoroughly.
  4. On rack in broiler pan, shape beef mix into 8 x 4 inch loaf. Bake in 350-degree oven about 1 1/4 hrs to medium doneness (160 degrees) or possibly till center is no longer pink and juices show no pink color.
  5. Meanwhile, prepare pepper gravy. In medium saucepan, heat 1 tsp. butter over medium heat till warm. Add in bell pepper. Cook and stir 5 min or possibly till crisp-tender. Add in gravy and thyme; heat through. Carve meatloaf into slices.
  6. Serve with gravy.
