.%20Equally%20important%20is%20how%20my%20food%20has%20been%20handled%20(read:%20raised).%3C/p%3E%3Cp%3ELast%20night's%20dinner%20was%20a%20wonder%20to%20me.%20Each%20component%20had%20been%20lovingly%20raised,%20picked%20or%20processed%20and%20arrived%20at%20my%20home%20at%20its%20quality%20best.%20I%20was%20able%20to%20tell%20the%20story%20of%20each%20ingredient's%20life.%3C/p%3E%3Cp%3EI%20won't%20bore%20you%20(like%20I%20did%20the%20rest%20of%20my%20dinner%20guests)%20with%20the%20life%20story%20of%20the%20carrots%20(Alstede%20Farms)%20or%20the%20potatoes%20or%20the%20garlic%20or%20the%20bread%20but%20bear%20with%20me%20while%20I%20tell%20you%20the%20story%20of%20the%20Leg%20of%20Lamb.%3C/p%3E%3Cp%3EOne%206%201/2%20pound%20boneless%20leg%20of%20lamb.%3C/p%3E%3Cp%3EOnce%20a%20year%20I%20purchase%20a%20whole%20lamb.%20Several%20years%20in%20a%20row%20I%20have%20purchased%20a%20lamb%20from%20a%20farm%20in%20upstate%20NY,%20from%20a%20friend%20of%20my%20girlfriend%20Michele.%20This%20year%20I%20purchased%20a%201/2%20lamb%20from%20Burning%20Heart%20Farms%20here%20in%20NJ%20and%20another%20half%20from%20a%20rancher%20in%20Montana*%20(I%20wanted%20to%20try%20a%20specific%20breed).%3C/p%3E%3Cp%3ELast%20night's%20leg%20of%20lamb%20came%20from%20Montana.%20The%20lamb%20was%20naturally%20weaned%20from%20its%20mother%20and%20then%20allowed%20to%20graze%20on%20sweet%20grass,%20in%20addition%20to%20being%20offered%20a%20vegetarian%20grain%20feed,%20until%20the%20age%20of%206%20months.%20(this%20is%20much%20older%20than%20the%20lamb%20you%20will%20find%20in%20a%20grocery%20store).%20It%20was%20then%20humanely%20slaughtered%20on%20site%20(no%20stressful%20trucking,%20no%20feedlots),%20packaged,%20given%20a%20serial%20number%20and%20shipped%20overnight%20to%20me.%20If%20I%20have%20any%20questions%20regarding%20this%20particular%20meat%20I%20can%20call%20the%20farm%20and%20reference%20the%20serial%20number.%20The%20rancher%20can%20tell%20me%20exactly%20when%20the%20lamb%20was%20born,%20who%20its%20parents%20were%20and%20where%20and%20how%20long%20it%20grazed%20as%20well%20as%20tell%20me%20the%20day%20it%20was%20processed.%3C/p%3E%3Cp%3EPlease%20believe%20me%20that%20it%20all%20makes%20a%20difference.%20Humanely%20raised.%20Sustainable%20farming%20practices.%20Picked%20at%20its%20peak.%20Respect%20for%20the%20animal.%3C/p%3E%3Cp%3EThere%20is%20an%20old%20Indian%20Proverb%20that%20reminds%20us%20to%20%22take%20the%20time%20to%20thank%20the%20food%22.%20%20I%20want%20to%20add%20to%20%22take%20the%20time%20to%20thank%20the%20wonderful%20ranchers%20and%20farmers%20who%20are%20raising%20our%20food%20with%20dignity%20and%20respect%20for%20both%20the%20food%20and%20the%20land%22.%3C/p%3E%3Cp%3ERemove%20leg%20of%20lamb%20from%20refrigerator%20at%20least%201%20hour%20before%20preparing.%3C/p%3E%3Cp%3EHeat%20grill%20or%20rotisserie.%3C/p%3E%3Cp%3EUsing%20a%20small,%20sharp%20paring%20knife,%20slide%20the%20knife%20between%20the%20outside%20layer%20of%20fat%20and%20the%20meat.%20Insert%20garlic%20slivers%20and%20sprigs%20of%20rosemary.%20Make%20about%2024%20slits%20all%20over%20the%20leg%20of%20lamb%20(depending%20on%20size).%3C/p%3E%3Cp%3ESqueeze%20the%20lemon%20all%20over%20the%20lamb,%20then%20generously%20salt%20and%20pepper%20the%20meat.%3C/p%3E%3Cp%3EIf%20you%20are%20planning%20to%20rotisserie,%20skewer%20the%20leg.%20If%20you%20are%20going%20to%20roast,%20heat%20oven%20to%20400%20degrees%20F%20and%20place%20in%20an%20ungreased%20roasting%20pan%20on%20a%20shallow%20rack.%3C/p%3E%3Cp%3ERotisserie%20or%20roast%2020%20minutes%20per%20pound%20for%20medium.%20This%20will%20yield%20a%20crisp,%20brown%20outer%20crust,%20followed%20by%20a%20rosy%20center.%3C/p%3E%3Cp%3EGinger%20and%20honey%20glazed%20carrots,%20boiled%20new%20potatoes%20with%20butter%20and%20parsley,%20and%20a%20crusty%20loaf%20of%20bread%20will%20round%20out%20this%20feast.%3C/p%3E%3Cp%3EAnd%20if%20you%20shop%20carefully,%20each%20component%20of%20your%20dinner%20will%20tell%20you%20a%20story.%3C/p%3E%3Cp%3EA%20Cook's%20Notes:%20The%20rest%20of%20the%20lamb%20story:%3C/p%3E%3Cp%3ESweet%20Grass%20Natural%20Lamb%20is%20a%20cooperative%20of%20five%20sheep%20producers%20from%20Sweet%20Grass%20County,%20Montana.%20Sweet%20Grass%20Natural%20lamb%20raises%20a%20cross%20of%20Targhee%20and%20Suffolk%20Lamb.%3C/p%3E%3Cp%3EThe%20first%20private%20individual%20began%20breeding%20Targhee%20in%201929.%20The%20breed%20was%20named%20after%20the%20Targhee%20National%20Forest%20where%20the%20sheep%20grazed%20during%20the%20summer.%3C/p%3E%3Cp%3EHarv%20VanWagoner,%20as%20well%20as%20the%20other%20producers,%20have%20farmed%20for%20five%20generations.%20Harv%20claims,%20%E2%80%9CWe%20eat%20what%20we%20raise%20so%20we%20can%20attest%20to%20the%20quality%20of%20our%20lamb%E2%80%9D.%20The%20farms%20range%20from%201900%20%E2%80%93%206400%20acres.%3C/p%3E%3Cp%3ESweet%20Grass%20Natural%20Lamb%20belongs%20to%20the%20Western%20Sustainability%20Exchange.%20The%20ewes%20roam%20freely%20and%20graze
