%3C/p%3E%3Cp%3EIt%20was%20Tapas%20Night%20again%20this%20week,%20and%20I%20made%20Tarteletter%20med%20Kylling%20og%20Svampe%20og%20Asparagus.%20%20%20%20%20OK,%20so%20it's%20Patty%20Shells%20with%20Chicken,%20%20Mushroom%20and%20Asparagus%20filling,%20if%20you%20insist%20on%20a%20translation.%20%20%20And%20according%20to%20this%20website%20Danes%20are%20known%20to%20consume%2040%20million%20tartaletter%20(patty%20shells)%20%20a%20year.%20%20%20%20And%20I%20can%20believe%20it.%20%20%20There%20are%20also%20over%20100%20different%20filling%20recipes%20as%20well.%20%20%20I%20just%20use%20one%20basic%20recipe,%20and%20I%20will%20vary%20it%20from%20time%20to%20time,%20but%20it's%20pretty%20basic.%3C/p%3E%3Cp%3EPersonally%20I%20love%20this,%20and%20probably%20could%20eat%20it%20a%20couple,%20three,%20five%20times%20a%20week.%20%20But%20Mom%20only%20made%20it%20once%20in%20a%20while%20and%20it%20was%20a%20special%20occasion%20kind%20of%20dish.%3C/p%3E%3Cp%3EThe%20original%20recipe%20calls%20for%20white%20asparagus,%20but%20my%20mom%20made%20it%20with%20mushrooms,%20so%20that's%20the%20way%20I%20do%20it%20as%20well.%20%20However,%20she%20also%20added%20Asparagus%20from%20time%20to%20time%20as%20well.%20%20%20So,%20it's%20up%20to%20you.%20%20Gee%20you%20could%20also%20go%20wild%20and%20add%20both%20to%20it,%20trust%20me%20it%20tastes%20wonderful.%20%20%20And%20I%20know%20this,%20cause%20I%20just%20did%20it.%3C/p%3E%3Cp%3EAnd%20I%20use%20a%20couple%20of%20shortcuts%20as%20well.%20%20You%20can%20do%20it%20this%20way%20as%20well,%20or%20make%20your%20own%20sauce.%3C/p%3E%3Cp%3EBasic%20Recipe.%3C/p%3E%3Cp%3EPuff%20Pastry%20Sheets%20%20(I'm%20using%20the%20frozen%20stuff%20for%20this%20recipe)%3C/p%3E%3Cp%3EChicken%3C/p%3E%3Cp%3EMushrooms%3C/p%3E%3Cp%3EAsparagus%20(optional)%3C/p%3E%3Cp%3ESauce%3C/p%3E%3Cp%3EToo%20basic?%20%20%20I%20know,%20but%20since%20I%20already%20know%20how%20to%20make%20it,%20I%20don't%20need%20more%20than%20that.%20%20But%20if%20you%20like,%20I'll%20share%20the%20step%20by%20step.%3C/p%3E%3Cp%3ETo%20start%20with,%20cook%20your%20chicken%20breasts%20til%20they%20are%20tender.%20%20Believe%20it%20or%20not%20a%20good%20hour%20in%20the%20pot%20with%20some%20carrots,%20onions,%20or%20leeks%20and%20celery%20to%20flavour%20the%20stock,%20and%20just%20let%20them%20simmer.%20%20%20When%20the%20chicken%20is%20tender,%20take%20them%20out%20and%20chop%20them%20up.%20%20%20Then%20strain%20the%20stock,%20and%20reserve%20a%20couple%20of%20cups%20for%20the%20sauce%20and%20freeze%20the%20rest,%20you%20just%20got%20a%20good%20base%20for%20home%20made%20soup.%20%20(nothing%20like%20a%20multi%20purpose%20dish).%20%20%20%20You%20can%20also%20use%20a%20whole%20chicken,%20cooked%20and%20cut%20up%20for%20this,%20or%20even%20a%20rotisserie%20chicken.%20%20%20I've%20done%20it%20all%20the%20ways.%3C/p%3E%3Cp%3EFor%20the%20sauce,%20you%20could%20use%20canned%20Mushroom%20Soup%20for%20this%20(and%20yes,%20I've%20used%20Canned%20Mushroom%20soup%20for%20this%20many%20times,%20just%20don't%20dilute%20it,%20%20or%20just%20make%20your%20own%20soup.%20%20Or%20you%20can%20do%20the%20following.%20%20%20I%20believe%20in%20options,%20lots%20of%20options.%3C/p%3E%3Cp%3ESaute%20the%20sliced%20mushrooms%20and%20onions%20til%20they%20are%20just%20cooked%20through%20and%20the%20onion%20is%20softened%20in%20a%20tablespoon%20of%20butter%20and%20a%20tablespoon%20of%20olive%20oil.%20%20%20%20%20Add%20the%20garlic%20and%20saute%20an%20additional%20minute%20or%20so,%20set%20aside.%20%20%20I%20don't%20let%20any%20of%20them%20get%20brown,%20you%20just%20want%20them%20cooked%20through.%3C/p%3E%3Cp%3EHeat%20broth%20and%20half%20and%20half%20to%20just%20under%20boiling,%20then%20add%20the%20thickening%20agent,%20either%20the%20cornstarch%20and%20broth%20or%20the%20roux,%20and%20stir%20it%20in.%20%20%20Let%20it%20come%20to%20a%20low%20simmer,%20and%20let%20it%20cook%20for%20a%20couple%20of%20minutes%20to%20get%20the%20raw%20taste%20out,%20then%20add%20the%20mushrooms%20and%20onion,%20continue%20to%20let%20it%20simmer%20for%20a%20few%20more%20minutes.%3C/p%3E%3Cp%3EThen%20you%20add%20the%20chicken,%20mushrooms%20and%20let%20it%20heat%20up.%20%20%20At%20the%20end%20add%20a%20can%20of%20asparagus,%20and%20just%20let%20it%20heat%20through%20a%20little.%20%20%20The%20asparagus%20breaks%20up%20very%20easily,%20so%20you%20don't%20want%20to%20stir%20it%20in.%3C/p%3E%3Cp%3ENow%20for%20the%20fun%20part,%20the%20tarts.%20%20%20I%20outsmarted%20myself%20this%20time.%20%20%20I%20thought,%20ooh,%20I%20can%20make%20teeny%20little%20bites%20using%20the%20pastry%20and%20baking%20them%20in%20my%20mini%20tart%20pans.%20%20Well,%20let%20me%20just%20show%20you%20what%20happened.%3C/p%3E%3Cp%3EBefore%20baking...%3C/p%3E%3Cp%3EAfter%20baking.%20%20%20Kinda%20hard%20to%20fill%20those%20up.%20%20%20(although%20I%20did%20cut%20them%20in%20half%20later%20on,%20and%20use%20the%20top%20and%20bottom%20to%20put%20filling%20in,%20hey,%20life%20hands%20you%20lemons,%20make%20lemonade%20or%20in%20this%20case,%20tart%20shells).%3C/p%3E%3Cp%3ESo%20then%20I%20went%20a%20more%20labor%20intensive%20route.%20%20%20But%20the%20end%20result,%20well%20worth%20it.%3C/p%3E%3Cp%3EUsing%20a%20pretty%20shaped%20round%20cookie%20cutter,%20I%20cut%20out%20two%20rounds%20for%20each%20tart.%3C/p%3E%3Cp%3EThen%20I%20cut%20out%20the%20center%20of%20the%20second%20round,%20and%20placed%20it%20on%20top%20of%20the%20first%20round.%3C/p%3E%3Cp%3EYou%20have%20to%20kind%20of%20noodge%20the%20rounds%20together.%20%20Oh%20you%20do%20need%20to%20brush%20the%20bottom%20round%20with%20a%20lightly%20beaten%20egg,%20it%20helps%20it%20to%20stick%20together.%20%20%20I%20did%20take%20out%20the%20center%20cut,%20and%20baked%20them%20separately.%3C/p%3E%3Cp%3EAs%20you%20can%20see,%20these%20worked.%20%20%20I%20even%20took%20more%20out%20of%20the%20center%20with%20a%20sharp%20paring%20knife,%20cutting%20very%20carefully%20around%20and%20prying%20out%20that%20center%20bit.%20%20%20Made%20more%20room%20for%20the%20filling.%20%20%20Very%20important%20that,%20the%20ratio%20of%20filling%20to%20tart.%3C/p%3E%3Cp%3EThese%20had%20the%20chicken,%20mushroom%20and%20asparagus%20mixture%20(and%20the%20picture%20is%20fuzzy,%20bad%20picture%20taking%20night%20I%20guess)%3C/p%3E%3Cp%3EThese%20were%20the%20vegetarian%20ones.%20%20%20I%20did%20the%20whole%20kit%20and%20caboodle%20on%20these.%20%20%20Made%20some%20veggie%20stock%20from%20scratch,%20simmered%20a%20mixture%20of%20vegetable%20stock%20and%20cream%20together%20and%20then%20thickened%20them%20with%20a%20roux,%20and%20added%20the%20mushrooms%20and%20asparagus.%3C/p%3E%3Cp%3EAnd%20just%20to%20let%20you%20know,%20you%20can%20buy%20the%20Puff%20Pastry%20tart%20shells%20already%20made,%20just%20bake%20them%20off%20in%20a%20hot%20oven,%20400%20degrees,%20for%20about%2018%20minutes%20or%20until%20browned,%20pull%20out%20the%20little%20cap,%20and%20then%20place%20them%20back%20in%20the%20oven%20for%20a%20few%20minutes%20to%20finish%20cooking.%20%20%20While%20they%20are%20baking,%20heat%20up%20a%20can%20or%20two%20of%20Cream%20of%20Mushroom%20soup,%20add%20a%20cup%20or%20two%20of%20cooked%20chopped%20chicken,%20and%20some%20sauteed%20mushrooms%20or%20even%20a%20can%20or%20two%20of%20mushrooms.%20%20Heat%20together%20and%20spoon%20into%20the%20baked%20pastry%20shells.%20%20%20%20Now,%20how%20easy%20is%20that?%20%20hmmm,%20and%20to%20think%20I%20played%20in%20the%20kitchen%20with%20the%20tart%20shells,%20and%20chicken%20mixture%20for%20over%20an%20hour,%20sigh.%20%20But%20it%20was%20good%20and%20worth%20it.%3C/p%3E%3Cp%3EThere%20were%20a%20few%20leftovers,%20but%20I'm%20enjoying%20them%20for%20lunch%20this%20week.%20%20%20Like%20I%20said%20before,%20I%20could%20eat%20this%20two,%20three,%20five%20times%20a%20week.%3C/p%3E){kind=link}
