Ingredients

  • 1 x recipe for 1 crust pie shell
  • 3 x Large eggs
  • 3/4 c. plus 2 Tbsp. light brown sugar
  • 3/4 c. pure maple syrup
  • 6 Tbsp. unsalted butter, melted
  • 1/4 c. brewed tea (Earl Grey is good)
  • 2 Tbsp. plus 1/2 tsp. cinder vinegar
  • 1 pch salt
  • 3/4 c. toasted minced walnuts

Directions

  1. Method:1. Roll out the dough, and fit it in a 9 inch pie pan. Crimp the edges. Refrigeratewhile preparing filling.
  2. 2. In a bowl, whisk together the Large eggs and sugar. Add in the syrup, butter, tea, vinegar, and salt. Whisk till smooth. Stir in the nuts.
  3. 3. Place the pie shell on a cookie sheet, and pour the filling into the shell.
  4. Bake in a preheated 450 degree F (230 degrees C) oven for 10 min.
  5. Lower the heat to 350 degrees F (175 degrees C), and bake till the center is still a bit wiggly. It will set completely when cooled, about 25 min. Cold, and serve with sweetened whipped cream.
  6. Makes 1 - 9 inch pie
  7. This is a Canadian Maple sugar pie. Although it tastes a little like pecan, the flavor is more complex and leaves everyone asking for your secret.
