• 1.5 pounds sweet potatoes, peeled and cut into chunks
• 2 cups cauliflower stems and pieces
• 1 Tbsp olive oil, divided
• 1 medium onion, finely chopped
• 3/8 tsp sea salt, divided
• 1 cup frozen peas, thawed
• 3 Tbsp finely chopped cilantro
• 2 tsp curry powder
• 2 tsp garam masala
• 12 sheets frozen whole-wheat phyllo dough, thawed
