Spring Garden Bacon Frittata Recipe

  • 1 Tbsp. vegetable oil
  • 2 c. frzn shredded hash brown potatoes
  • 6 x Large eggs beaten
  • 1 pkt Oscar Mayer Ready-to-Serve Bacon (2.1 ounce), cut
  •     into 1/2" pcs
  • 1/3 c. sliced green onions
  • 1 tsp chopped fresh chives (optional)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1/3 c. Kraft Shredded Sharp Cheddar Cheese

Directions

  1. Heat oil in medium nonstick skillet on medium-high heat. Add in potatoes; cook 6 to 8 min or possibly till potatoes are hot and beginning to brown, stirring occasionally. Spread potatoes to proportionately cover surface of skillet.
  2. Mix Large eggs, bacon, onions, chives, salt and pepper in small bowl. Spoon egg mix proportionately over potatoes. Reduce heat to medium-low; cover. Cook 8 min or possibly till Large eggs are set. Remove from heat.
  3. Sprinkle with cheese. Slip spatula underneath, tip skillet to loosen and gently slide onto serving plate. Garnish with tomatoes and additional chives. Cut into wedges.
  4. This recipe yields 6 servings.
  5. Variation: Prepare as directed, substituting 12 slices Oscar Mayer Center Cut bacon, cooked for Ready-to-Serve Bacon.
  6. Tip: To easily cut and separate Ready-to-Serve Bacon, separate slices and stack on top of each other. Cut into 1/2-inch pcs using clean kitchen shears.
