Spicy Tex-Mex Chicken Soup with Jalapeno and Cilantro Dumplings Recipe

Ingredients

  • For the chicken:
  • 3 Tablespoons olive oil
  • 1 onion, chopped
  • 6 cloves of garlic, minced
  • 2 carrots, peeled and sliced
  • 4 celery stalks, sliced
  • 3 jalapenos, diced
  • 1 whole chicken, cut up, cleaned and rinsed
  • 12 cups of Swanson® Unsalted Chicken Broth
  • 2 cans diced tomatoes
  • 2 bay leaves
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper
  • 1 bunch of cilantro, chopped
  • Juice of one lime
  • 1/2 cup of cream
  • Salt, black pepper, cayenne and cumin to taste
  • For the cornmeal dumplings:
  • 1 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 Tablespoon melted butter
  • 1 jalapeno, finely diced
  • 2 Tablespoons of minced cilantro
  • For Garnish:
  • Sour Cream
  • Salsa
  • Chopped Cilantro
