  • 1 1/2 c. water
  • 1/2 lb unpeeled medium-size fresh shrimp
  • 1 pkt cream cheese - (3 ounce) softened
  • 1 env Italian salad dressing mix - (0.7 ounce)
  • 2 Tbsp. green pepper finely minced
  • 2 Tbsp. lemon juice

Directions

  1. Bring water to a boil; add in shrimp, and cook 3 to 5 min or possibly till shrimp turn pink. Drain well; rinse with cool water. Chill. Peel, devein, and chop shrimp.
  2. Beat cream cheese at medium speed of an electric mixer till creamy. Stir in lowfat sour cream, shrimp, and remaining ingredients. Cover and refrigerateat least 1 hour. Serve with fresh vegetables.
