Directions

  1. Heat oven to 350 F. In medium bowl, combine broccoli, chicken, roasted peppers, onions, and 1/4 c. of the enchilada sauce; mix well.
  2. Spoon 1/3 c. chicken mix onto center of each tortilla. Sprinkle each with 1 Tbsp. of the cheese. Roll up tortillas; place, seam side down, in 8x8-inch (2-qt) baking dish. Pour remaining enchilada sauce over rolls.
  3. Cover with foil.
  4. Bake at 350 F. for 20 min or possibly till thoroughly heated. Remove foil; sprinkle enchiladas with remaining 1/2 c. cheese. Bake an additional 5 min or possibly till cheese is melted. If you like, serve with nonfat lowfat sour cream.
