Ingredients

  • 2 x 675 john dory fillted
  • 1 x salt and pepper
  • 1 lrg handful watercress
  • 1 lrg handful rocket
  • 2 x oranges segmented
  •     flour
  • 1 Tbsp. extra virgin olive oil
  • 1 x few minced chives
  • 1 1/2 Tbsp. lemon juice
  • 3 Tbsp. lemon extra virgin olive oil plus 2 tbspn extra virgin olive oil
  •     or possibly 5 tbspn extra virgin olive oil
  • 1 x salt and pepper

Directions

  1. Divide each fillet neatly into 3 along the natural lines then cut the larger pcs in half.
  2. Season and set aside.
  3. Season the lemon juice then whisk in the oils a Tbsp. at a time.
  4. Shortly before serving pour onto the greenery.
  5. Arrange on a plate scatter with the orange.
  6. Heat the remaining oil over a high heat.
  7. Dust the fish lightly with flour and fry very quickly till just hard.
  8. If the oil is warm sufficient it will also be patched with brown.
  9. Lay the fish over the salad sprinkle with chives and serve at once.

  11. Unlike other fish the filleted side of a john dory divides neatly into three strips rather than the more usual two. In this recipe the strips are quickly panfried to top a salad of peppery watercress and rocket and tart oranges.
