,%20we've%20had%20sweet%20potatoes%20on%20the%20table.%3C/p%3E%3Cp%3EEvery%20year%20I%20try%20to%20think%20of%20a%20new%20way%20to%20serve%20them.%3C/p%3E%3Cp%3EBaked.%20%20Roasted.%20%20Mashed.%20%20Pie.%20%20Bread.%20%20Biscuits.%3C/p%3E%3Cp%3EThis%20year%20it%20dawned%20on%20me%20that%20the%20Thanksgiving%20sweet%20potatoes%20could%20be%20served%20as%20a%20soup%20course.%3C/p%3E%3Cp%3EBut%20they%20won't.%3C/p%3E%3Cp%3EBecause%20we%20don't%20have%20a%20%22soup%20course.%22%3C/p%3E%3Cp%3EAnd%20because%20we%20always%20have%20the%20same%20sweet%20potato%20casserole%20every%20year.%3C/p%3E%3Cp%3ESo%20this%20exercise%20is%20totally%20pointless.%3C/p%3E%3Cp%3ERoasted%20Sweet%20Potato%20Soup%20is%20not%20pointless,%20though.%20%20My%20husband%20made%20this%20soup%20one%20day%20for%20lunch.%20%20Just%20whipped%20it%20up%20using%20whatever%20he%20could%20find.%20%20I%20appreciated%20having%20lunch%20made%20for%20me%20and%20that%20it%20was%20made%20using%20what%20we%20had.%20%20What%20can%20I%20say?%20%20I'm%20a%20cheap%20date.%3C/p%3E%3Cp%3EOver%20time,%20sour%20cream%20and%20Parmesan%20crisps%20were%20added%20to%20dress%20it%20up.%3C/p%3E%3Cp%3EDressy%20enough%20for%20Thanksgiving?%3C/p%3E%3Cp%3EMore%20Sweet%20Potatoes...%3C/p%3E%3Cp%3EClockwise%20from%20top%20left:%3C/p%3E%3Cp%3ESweet%20Potato%20Bread%20w/%20Praline%20Butter%20%20%7C%20%20Praline%20Yams%20%20%7C%20%20Roasted%20Parsnips%20(and%20sweet%20potatoes)%20w/%20Caper%20Vinaigrette%20%20%7C%20%20Roasted%20Sweet%20Potatoes%20and%20Onions%20with%20Rosemary%20and%20Parmesan%20%20%7C%20%20Sweet%20Potato%20Cakes%20%20%7C%20%20Bacon,%20Sweet%20Potato,%20&%20Sage%20Baked%20Risotto%20%20%7C%20%20Sweet%20Potato%20Crunch%20%20%7C%20%20Fall%20Sweet%20Potato%20Toss%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20F.%3C/p%3E%3Cp%3EPlace%20the%20diced%20sweet%20potato%20on%20a%20large%20baking%20sheet.%20%20Drizzle%20with%20olive%20oil%20and%20toss%20to%20coat.%20%20Pat%20the%20sweet%20potato%20cubes%20into%20one%20single%20layer%20and%20season%20with%20salt%20and%20black%20pepper.%20%20Roast%20potatoes%20for%20about%2035%20minutes,%20or%20until%20just%20starting%20to%20brown%20on%20the%20edges.%3C/p%3E%3Cp%3EMeanwhile,%20add%202%20tsp%20olive%20oil%20to%20a%20soup%20pot%20and%20heat%20over%20medium.%20%20Add%20the%20onions%20and%20saute%20until%20the%20onions%20have%20caramelized.%20%20Toss%20in%20the%20garlic%20and%20saute%20a%20few%20minutes%20more.%20%20When%20the%20sweet%20potatoes%20are%20done,%20add%20to%20the%20pot%20along%20with%20the%20broth.%20%20Stir%20in%20the%20rosemary%20and%20herbes%20de%20Provence.%20%20Season%20to%20taste%20with%20salt%20and%20black%20pepper.%20%20Simmer%20for%2010-15%20minutes.%20%20Puree%20with%20an%20immersion%20blender%20and%20serve%20topped%20with%20a%20dollop%20of%20sour%20cream,%20a%20sprinkle%20of%20rosemary%20leaves,%20and%20Parmesan%20Crisps%20(below).%3C/p%3E%3Cp%3EParmesan%20Crisps%3C/p%3E%3Cp%3E1%20Tbsp%20grated%20Parmesan%20cheese%20per%20crisp%20(do%20not%20use%20finely%20grated%20or%20Parmesan%20from%20a%20can--neither%20will%20not%20melt%20correctly)%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20F.%20%20Place%20a%20silicone%20baking%20mat%20on%20a%20large%20cookie%20sheet.%20%20Spoon%20Parmesan%20onto%20the%20silicone%20mat%20by%20the%20tablespoon,%20flattening%20the%20cheese%20slightly%20with%20your%20fingers.%20%20Place%20about%201%22%20apart.%20%20Bake%20for%20about%205%20minutes%20until%20cheese%20is%20melted%20and%20golden.%20%20Transfer%20to%20paper%20towels%20to%20drain,%20cool,%20and%20harden.%3C/p%3E%3Cp%3ELinking%20with:%3C/p%3E){kind=link}
