Roasted Pear Salad Recipe

Ingredients

• 3 ripe Anjou pears, peeled and sliced lengthwise in half
• 1/4 cup + 1 tbsp. freshly squeezed lemon juice, divided
• 3 oz. blue cheese crumbles
• 1/4 cup walnut halves, toasted and diced
• 1/4 up dried cranberies
• 1/2 cup apple cider
• 3 tbsp. port wine
• 3 tbsp. brown sugar
• 6 oz. baby arugula
• 1 tbsp. olive oil
• salt and pepper
