%20%20As%20I've%20never%20even%20heard%20of%20%22Kale%20Chips%22%20up%20until%20a%20few%20months%20ago,%20I'm%20realizing%20just%20how%20out%20of%20touch%20I%20am.%20%20That%20being%20said,%20I've%20just%20boarded%20the%20Kale%20Boat.%3C/p%3E%3Cp%3ETrying%20for%2012%20of%20her%2013%20years%20to%20get%20Liv%20to%20eat%20anything%20green,%20I%20had%20nearly%20given%20up%20when%20last%20year%20she%20discovered%20salad.%20%20All%20kinds%20of%20salads,%20Caesar,%20spinach,%20ranch%20dressing,%20specialty%20olive%20oils%20and%20vinegars%20and%20tomatoes.%20%20Yes,%20even%20tomatoes%20entered%20the%20picture%20and%20she%20has%20asked%20for%20them%20by%20name.%20%20Still,%20her%20green%20repertoire%20remained%20fairly%20slim%20and%20limited%20to%20just%20few%20items%20so%20I'm%20always%20looking%20for%20ways%20to%20increase%20the%20green.%3C/p%3E%3Cp%3ELiv%20&%20Miss%20AbbieImagine%20my%20surprise%20when%20she%20arrived%20home%20from%20a%20dance%20class%20with%20her%20choreographer%20Miss%20Abbie%20(you%20may%20have%20seen%20Abbie%20on%20last%20season's%20Amazing%20Race%20as%20part%20of%20the%20team%20Abbie%20&%20Ryan)%20and%20asked%20for%20kale.%3C/p%3E%3Cp%3E%22Kale?%22,%20I%20asked,%20%22You%20really%20want%20kale?%22.%3C/p%3E%3Cp%3E%22Yes,%22%20came%20her%20response.%20%20%22I%20love%20kale!%20%20Kale,%20and%20do%20we%20have%20any%20truffle%20oil??%22%3C/p%3E%3Cp%3EWell,%20no,%20we%20didn't%20have%20any%20truffle%20oil,%20but%20we%20do%20now.%20%20Seems%20Miss%20Abbie%20roasted%20her%20kale%20with%20truffle%20oil%20and%20brought%20the%20crispy%20pieces%20into%20class%20for%20the%20girls%20to%20try.%20%20Ever%20trying%20to%20increase%20the%20eating%20habits%20of%20the%20girls,%20I'm%20immensely%20thankful%20to%20Miss%20Abbie's%20encouragement,%20because%20pretty%20much%20anything%20Miss%20Abbie%20does%20is%20really%20cool%20in%20her%20student's%20eyes.%3C/p%3E%3Cp%3ESo%20Liv%20comes%20home%20proclaiming%20her%20love%20of%20Roasted%20Kale%20with%20Truffle%20Oil%20and%20we%20had%20to%20try.%20%20Adding%20a%20touch%20of%20garlic%20to%20the%20mixture,%20I%20have%20to%20admit%20that%20it's%20pretty%20darn%20good,%20in%20fact,%20Liv%20and%20I%20sparred%20over%20the%20last%20few%20pieces.%20%20(I'll%20admit%20here%20the%20Liv%20just%20may%20have%20received%20her%20green%20aversion%20from%20me.)%3C/p%3E%3Cp%3ERoasted%20to%20a%20sort%20of%20crispness,%20parts%20of%20the%20kale%20remain%20a%20little%20softer%20bring%20all%20sorts%20of%20textures%20to%20the%20snack,%20and%20yes,%20the%20truffle%20oil%20makes%20all%20the%20difference.%20%20Are%20you%20on%20the%20Kale%20Boat??%3C/p%3E%3Cp%3ERoasted%20Kale%20with%20Garlic%20and%20Truffle%20Oil%3C/p%3E%3Cp%3EFor%20crispy%20kale%20roast%20for%20a%20little%20longer,%20for%20crispy/soft%20pieces%20roast%20a%20little%20shorter.%20%20Keep%20your%20eye%20on%20the%20roasting%20as%20it%20can%20go%20from%20%22perfectly%20crispy%22%20to%20%22burnt%20to%20a%20crisp%22%20in%20a%20flash.%3C/p%3E%3Cp%3EWash%20kale%20and%20dry.%20%20Preheat%20the%20oven%20to%20375%C2%BA.%20%20Remove%20touch%20stems%20from%20kale,%20tear%20the%20remaining%20leaves%20into%202-inch%20(or%20so)%20pieces.%20%20Drizzle%20kale%20with%20truffle%20oil,%20press%20the%20garlic%20in%20a%20garlic%20press%20into%20the%20kale%20and%20toss%20to%20coat%20the%20kale%20with%20the%20garlic%20and%20oil.%20%20Sprinkle%20with%20salt%20and%20pepper%20if%20desired.%3C/p%3E%3Cp%3EPlace%20kale%20on%20a%20baking%20sheet%20(it's%20fine%20if%20it%20is%20not%20in%20one%20layer)%20and%20place%20into%20the%20oven.%20%20Bake%20for%2013-20%20minutes,%20or%20until%20the%20kale%20is%20the%20texture%20you%20enjoy,%20stir%20about%20half%20way%20through%20the%20cooking%20time.%3C/p%3E%3Cp%3EServe%20and%20enjoy!%3C/p%3E){kind=link}
