Roast Pork With Port Jus And Chipotle Glazed Apples Recipe

  • 2 Tbsp. grnd cumin
  • 2 tsp salt
  • 2 tsp freshly-grnd black pepper
  • 2 tsp chili pwdr
  • 1/2 c. golden sugar - (packed) plus
  • 1 Tbsp. golden sugar
  • 3 lb boneless center-cut pork rib roast
  • 3 c. ruby Port
  • 1/4 c. minced shallots
  • 1 3/4 c. beef stock or possibly canned beef broth
  • 1 3/4 c. chicken stock
  •     (or possibly canned low-salt chicken broth)
  • 1 x fresh thyme sprig
  • 3 Tbsp. unsalted butter chilled, and
  •     cut into small pcs
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Chipotle-Glazed Apples (see recipe)

Directions

  1. Mix first 4 ingredients and 1/2 c. brown sugar in small bowl. Rub spice mix over pork. Place in large glass baking dish. Cover and chill overnight.
  2. Preheat oven to 375 degrees. Transfer pork to large roasting pan. Reserve juices in glass dish. Roast pork till thermometer inserted into center registers 155 degrees, about 1 hour 45 min, basting with reserved juices from glass dish every 30 min.
  3. Meanwhile, combine Port, shallots and remaining 1 Tbsp. brown sugar in heavy medium saucepan. Boil till syrupy, about 25 min. Add in both stocks and thyme. Boil till reduced to 1 1/4 c., about 30 min. Strain sauce. Return to saucepan. Mix any pan drippings from pork into sauce (don't scrape roasting pan). Add in butter; whisk till melted. Season with salt and pepper.
  4. Cut pork into 1/4-inch-thick slices. Divide among 6 plates. Spoon Chipotle-Glazed Apples alongside, dividing equally. Spoon sauce over and around pork.
  5. This recipe yields 6 servings.
  6. Comments: At the restaurant, this dish is served with cilantro mashed potatoes. The pork has to marinate overnight, so begin preparing the recipe a day ahead.
