Ring Of Coconut Fudge Cake Recipe

Ingredients
- 2 c. White Sugar
- 1 c. Veg. Oil
- 2 x Large eggs
- 3 c. Flour
- 1 c. Warm Coffee Or possibly Water
- 1 c. Buttermilk
- 1 tsp Vanilla
- 2 tsp Baking Soda
- 2 tsp Baking Pwdr
- 1/2 c. Minced Nuts
- 1/4 c. Sugar
- 1 tsp Vanilla
- 1 pkt (8 Ounce) Cream Cheese
- 1 x Egg
- 1 pkt (6 Ounce) Choc.Chips
- 1/2 c. Coconut
Directions
- In a large mixing bowl, mix sugar, oil and Large eggs. Beat 1 minute on high speed. Add in remaining ingredients except nuts. Beat 3 min on medium speed. Stir in nuts. Pour 1/2 batter into greased and floured bundt pan.
- For filling, combine and beat till smooth. Spoon filling over batter. Top with remaining batter. Bake 1 hour and 15 min in a 350 degree oven. Let cold 15 min and turn out on rack.
