  • 4 small red potatoes, sliced paper thin with a food processor, mandoline or sharp knife
  • Kosher salt
  • 1/2 lb shredded mozzarella
  • 4 ounces goat cheese, crumbled
  • 1/4 cup grated Parmesan
  • Freshly ground black pepper
