%3C/p%3E%3Cp%3EFunnel%20-%20I%20guess%20this%20could%20be%20an%20optional%20tool%20if%20you%20think%20you%20can%20be%20really%20neat%20with%20a%20ladle.%3C/p%3E%3Cp%3EClean%20kitchen%20towels%20(these%20are%20always%20a%20must%20for%20me)%3C/p%3E%3Cp%3EOptional:%3C/p%3E%3Cp%3EMandolin%20-%20Knife%20works%20fine%20too.%20this%20just%20gives%20you%20perfectly%20even%20cuts,%20and%20is%20pretty%20quick.%20even%20for%20me%20and%20I%20am%20pretty%20fast%20with%20a%20knife.%3C/p%3E%3Cp%3EHead%20space%20tool%20-%20you%20can%20find%20this%20in%20the%20canning%20section%20of%20your%20local%20kitchen%20wares%20store.%20It%20is%20good%20for%20measuring%20head%20space%20since%20different%20foods%20require%20different%20amounts%20of%20space%20in%20the%20jars%20for%20expansion%20etc.%20The%20other%20side%20you%20can%20also%20use%20to%20release%20any%20air%20bubbles%20that%20may%20get%20trapped.%3C/p%3E%3Cp%3EMagnetic%20jar%20lifter%20-%20I%20used%20one%20just%20cuz%20it%20came%20with%20my%20jar%20lifter.%20This%20is%20basically%20a%20stick%20with%20a%20magnet%20on%20the%20end.%20Handy%20for%20lifting%20sterilized%20lids%20and%20rings%20out%20of%20hot%20water.%20It%20helps%20to%20keep%20things%20clean,%20but%20when%20I%20am%20canning%20I%20wear%20gloves%20anyway.%20(just%20to%20be%20on%20the%20safe%20side)%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EFirst%20completely%20dissolve%20salt%20in%20water,%20add%20cucumber%20and%20onion%20slices.%20Add%20water%20till%20just%20covers%20veggies.%20Cover%20and%20let%20this%20sit%20on%20the%20counter%20for%20about%202%20hours.%20After%20wards%20drain%20in%20a%20colander%20and%20rinse%20with%20cool%20water.%3C/p%3E%3Cp%3EIn%20a%20sauce%20pan%20combine%20the%20vinegars,%20sugar,%20mustard%20seeds,%20turmeric,%20garlic,%20and%20chili%20flake.%20Bring%20to%20a%20boil%20over%20high%20heat.%20Reduce%20heat%20to%20medium%20and%20simmer%20till%20ready.%20%20Just%20an%20fyi%20here.%20Don't%20put%20your%20face%20over%20the%20pot%20while%20it%20is%20boiling%20to%20smell%20the%20yummy-ness%20of%20the%20combination%20of%20flavors%20here.%20Your%20eyes%20will%20water,%20your%20nose%20will%20burn,%20and%20you%20will%20cough.%20Moving%20on...%3C/p%3E%3Cp%3EPlace%20freshly%20washed%20jars%20in%20a%20large%20pot%20of%20boiling%20water.%20Place%20lids%20&%20rings%20in%20a%20separate%20pot%20of%20boiling%20water.%20Carefully%20remove%20jars,%20fill%20with%20cucumber%20and%20onion%20mixture,%20then%20using%20a%20funnel,%20fill%20with%20hot%20vinegar%20liquid%20leaving%20a%201/4%22%20head%20space.%20If%20desired%20sprinkle%201/2%20teaspoon%20of%20Pickle%20Crisp%20in%20each%20jar.%20Using%20a%20clean/damp%20paper%20towel%20wipe%20the%20rim%20to%20remove%20any%20spilled%20liquid.%20Place%20lid%20on%20and%20screw%20the%20ring%20until%20just%20barely%20tight.%20Repeat%20with%20remaining%20jars.%20Place%20jars%20in%20a%20hot%20water%20canner%20(or%20I%20just%20used%20my%20big%20pasta%20pot%20with%20a%20steamer%20on%20the%20bottom).%20Make%20sure%20the%20jars%20are%20completely%20covered.%20Bring%20to%20a%20full%20rolling%20boil,%20cover%20and%20let%20process%20for%2015%20minutes.%20Remove%20jars%20with%20a%20jar%20lifter%20and%20place%20them%20on%20a%20clean%20kitchen%20towel%20on%20the%20counter.%20Some%20where%20out%20of%20the%20way%20where%20the%20kids%20won't%20be%20touching%20them,%20and%20they%20won't%20get%20knocked%20over.%20Don't%20touch%20the%20jars%20for%20at%20least%204%20hours.%20When%20they%20have%20cooled%20completely,%20press%20down%20on%20the%20lids.%20If%20they%20pop%20back%20at%20you%20they%20did%20not%20seal%20completely.%20At%20this%20point%20you%20can%20either%20A.)%20Re-process%20them%20as%20stated%20above,%20or%20B.)%20put%20them%20in%20your%20fridge%20and%20consume%20within%20the%20next%20week%20or%20so.%20If%20your%20lids%20do%20not%20pop%20back%20at%20you%20CONGRATS!%20You%20have%20successfully%20canned%20your%20pickles!%20Tighten%20the%20rings%20all%20the%20way%20and%20place%20in%20your%20pantry%20to%20%22marinate%22%20for%20at%20least%202%20weeks.%20Then%20crack%20those%20babies%20open%20and%20enjoy!!%3C/p%3E){kind=link}
