Pecan Shortbread Cookies Recipe
Ingredients
- Salted butter - 2sticks or 1 cup, at room temperature (I used unsalted butter and the cookies came out just fine)
- Confectioners Sugar - 1cup
- Vanilla extract - 2tsp
- All purpose flour - 2cups
- Pecans - 1cup, toasted and finely chopped

.%20I%20baked%20them%20for%20my%20dear%20friends%20who%20prefer%20desserts%20that%20are%20not%20overly%20sweet%20and%20rich.%20They%20all%20loved%20them%20a%20lot.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20300%C2%B0F.%20Lightly%20grease%202%20round%209%22%20baking%20pans.%20If%20you%20are%20worried%20that%20the%20cookies%20might%20stick%20to%20the%20bottom,%20then%20line%20the%20bottom%20with%20parchment%20paper%20and%20grease%20the%20parchment.%20I%20don't%20have%209%22%20round%20pans,%20so%20I%20used%20one%209%22%20square%20pan%20and%20one%206%22%20round%20pan%20instead.%3C/p%3E%3Cp%3EIn%20a%20medium%20sized%20mixing%20bowl,%20beat%20together%20butter,%20sugar%20and%20vanilla%20extract%20until%20light%20and%20fluffy.%20Then%20add%20flour%20and%20pecans%20(toasted%20and%20chopped)%20and%20beat%20until%20the%20mixture%20comes%20together.%20Initially%20it%20will%20look%20as%20if%20the%20dough%20is%20never%20going%20to%20come%20together,%20but%20after%2030%20seconds%20of%20continuous%20beating,%20it%20will%20come%20together.%20If%20it%20absolutely%20doesn't%20come%20together,%20then%20dribble%20in%201tablespoon%20water,%20until%20it%20does.%20This%20is%20a%20stiff%20dough.%3C/p%3E%3Cp%3EDivide%20the%20dough%20between%20the%202%20baking%20pans%20and%20then%20smoothen%20the%20top%20with%20your%20fingers.%3C/p%3E%3Cp%3EPrick%20the%20surface%20with%20a%20fork%20all%20over%20to%20let%20the%20steam%20escape.%3C/p%3E%3Cp%3EBake%20until%20the%20shortbread%20is%20light%20golden%20on%20the%20top%20surface%20and%20a%20deeper%20golden%20brown%20around%20the%20edges,%20about%2035%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20the%20oven%20and%20immediately%20turn%20it%20out%20onto%20a%20clean%20working%20surface.%3C/p%3E%3Cp%3EWhen%20still%20warm,%20using%20a%20pizza%20wheel%20or%20a%20sharp%20knife,%20cut%20the%20shortbread%20into%20wedges%20or%20rectangles.%20If%20you%20wait%20till%20the%20shortbread%20cools,%20then%20it%20will%20be%20difficult%20to%20cut%20the%20cookies.%3C/p%3E%3Cp%3EPlace%20the%20cookies%20on%20a%20wire%20rack%20to%20cool%20completely.%3C/p%3E%3Cp%3EI%20cut%20the%20cookies%20in%20the%206%22%20round%20pan%20into%20wedges%20and%20the%20ones%20in%20the%20square%20into%20rectangles.%3C/p%3E){kind=link}
