Parsley Pesto Bruschetta with Balsamic Reduction Recipe
Ingredients
- About 1 cup balsamic vinegar
- 1/2 bunch fresh flat leaf parsley, roughly chopped
- 14-16 large leaves fresh basil, roughly chopped
- 1/4 cup walnuts
- About 1/4 cup extra virgin olive oil
- Sea salt
- Freshly cracked pepper
- 1 loaf french baguette

%3C/p%3E%3Cp%3EAnyway,%20so%20yesterday%20was%20one%20of%20the%20nasty%20pouring%20down%20rain%20days%20where%20all%20you%20want%20to%20do%20is%20wear%20comfy%20clothes,%20bake%20carbohydrates%20and/or%20sit%20in%20front%20of%20the%20fireplace%20reading%20a%20good%20book%20like%20The%20Sharper%20Your%20Knife%20The%20Less%20You%20Cry,%20by%20Kathleen%20Flinn%20while%20you%20listen%20to%20the%20fat%20raindrops%20pelt%20the%20windows.%20I%20actually%20love%20the%20rain%20on%20days%20like%20that.%3C/p%3E%3Cp%3EI%20don't%20love%20the%20rain%20when%20I%20have%20to%20wear%20work%20clothes%20and%20tromp%20Noodle%20Nose%20through%20the%20puddles,%20as%20he%20necessarily%20splashes%20each%20one%20while%20we%20laboriously%20make%20our%20way%20from%20the%20warm%20car%20into%20the%20hectic%20atmosphere%20of%20his%20daycare.%3C/p%3E%3Cp%3EI%20did,%20however%20get%20to%20come%20home%20a%20little%20early%20and%20make%20soup.%20Remember%20the%20soup%20I%20posted?%20The%20Roasted%20Parsnip%20and%20Sweet%20Potato%20soup?%20Well,%20what%20goes%20better%20with%20a%20soup%20like%20that%20than%20a%20lovely%20bruschetta,%20bright%20in%20flavor%20and%20color?%3C/p%3E%3Cp%3EI%20had%20to%20make%20this%20bruschetta%20up%20based%20on%20what%20I%20had%20available%20in%20the%20refrigerator%20because%20the%20rain?%20Yep,%20still%20at%20it,%20and%20I%20wasn't%20interested%20in%20trekking%20to%20the%20store.%20Luckily%20it%20turned%20out%20really%20good,%20and%20it%20was%20really%20simple.%20Bonus.%20The%20freshness%20of%20the%20parsley%20paired%20with%20the%20balsamic%20reduction%20was%20the%20perfect%20'bite'%20paired%20with%20the%20sweetness%20of%20the%20soup.%3C/p%3E%3Cp%3EI%20love%20that%20this%20bruschetta%20can%20also%20easily%20be%20serve%20alone%20as%20an%20appetizer%20or%20side%20to%20something%20else.%20It's%20also%20super%20easy%20to%20make%20and%20you%20could%20make%20it%20ahead%20if%20you%20wanted.%20Extra%20fantastic%20for%20parties%20where%20you%20want%20to%20be%20your%20own%20guest%20vs.%20a%20crazy%20kitchen%20dweller.%3C/p%3E%3Cp%3ENeed:%3C/p%3E%3Cp%3EDo:%3C/p%3E%3Cp%3EIn%20a%20small%20pan,%20heat%20the%20balsamic%20vinegar%20over%20med/low%20heat.%20Bring%20it%20to%20a%20boil%20then%20reduce%20to%20a%20simmer.%20Let%20cook%20about%205-10%20minutes,%20stirring%20to%20ensure%20it%20doesn't%20stick%20to%20the%20pan.%3C/p%3E%3Cp%3ETurn%20off%20stove%20and%20let%20it%20cool.%20When%20it's%20'done'%20it%20isn't%20necessarily%20'thick',%20but%20as%20you%20let%20it%20cool%20it%20will%20thicken%20up.%3C/p%3E%3Cp%3EWhile%20the%20vinegar%20is%20reducing%20you%20can%20work%20on%20your%20pesto:%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20combine%20the%20parsley,%20basil%20and%20olive%20oil.%20Pulse%20to%20combine%20then%20add%20walnuts.%3C/p%3E%3Cp%3EContinue%20to%20pulse%20into%20a%20paste%20then%20add%20salt%20and%20pepper%20to%20taste.%20Pulse%20to%20combine%20and%20let%20rest%20for%20a%20few%20minutes%20before%20you%20taste%20it.%20This%20will%20give%20the%20salt%20and%20pepper%20time%20to%20incorporate.%3C/p%3E%3Cp%3EMeanwhile,%20preheat%20the%20oven%20to%20400%20or%20prep%20your%20toaster%20oven%20(note:%20I%20use%20the%20toaster%20oven%20as%20much%20as%20possible...%20it%20just%20seems%20more%20green%20to%20me)%3C/p%3E%3Cp%3ESlice%20your%20bread%20diagonally%20into%20about%201/2%20inch%20thick%20pieces.%20Arrange%20pieces%20on%20a%20baking%20sheet%20and%20drizzle%20with%20olive%20oil%20then%20sprinkle%20with%20sea%20salt.%3C/p%3E%3Cp%3EToast%20in%20oven%20or%20toaster%20oven%20for%20about%205%20minutes%20until%20barely%20toasted.%3C/p%3E%3Cp%3ETaste%20your%20pesto.%20If%20it%20needs%20more%20salt,%20add%20it%20and%20pulse%20to%20ensure%20it's%20properly%20blended%20into%20a%20paste%20consistency.%3C/p%3E%3Cp%3ESpread%20pesto%20onto%20toasts%20fairly%20liberally.%20Transfer%20to%20serving%20plate%20and%20drizzle%20your%20cooled%20balsamic%20reduction%20on%20top.%3C/p%3E%3Cp%3EServe:%3C/p%3E%3Cp%3EIn%20this%20particular%20instance%20we%20served%20it%20with%20that%20delicious%20roasted%20parsnip%20and%20sweet%20potato%20soup.%20As%20I%20mentioned%20above,%20this%20bruschetta%20would%20also%20make%20a%20great%20appetizer%20or%20side%20to%20something%20else.%20It%20is%20also%20super%20easy%20to%20make%20ahead%20and%20travels%20well.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3EParsley%3C/p%3E){kind=link}
