Ingredients

• 1-1/4 cups shortbread cookies crumbs (about 15 cookies)
• 2 Tbsp. unsalted butter, melted
• For the filling:
• 2 pounds good-quality whole milk ricotta cheese, at room temperature
• 3/4 cup granulated sugar
• 1/4 cup orange marmalade (plus 1/2 cup for glaze)
• 1/3 cup all-purpose flour
• 3 large eggs, at room temperature
• 2 large egg yolks, at room temperature
• 2 tsp. vanilla extract
• 1/2 tsp. salt
