  • 1/2 c. Water
  • 1/4 tsp Salt
  • 1/4 c. Margarine or possibly Butter
  • 1 Tbsp. Sherry
  • 1/2 c. All-Purpose Flour
  • 2 x Large eggs
  • 5 ounce Jar Old English*
  • 1 pkt 3-ounce. Cream Cheese, Softened
  • 1 Tbsp. Minced Stuffed Green Olives
  • 2 tsp Sherry

Directions

  1. *INGREDIENT LIST SHOULD READ: 1 5-ounce. Jar Old English (sharp) pasteurized process cheese spread, softened.
  2. Heat oven to 400 degrees F. Grease cookie sheet. In med. saucepan, heat water, salt and margarine to boiling. Add in flour and sherry, stirring constantly, till mix forms ball and leaves sides of pan. Remove from heat; blend in 1/4 c. cheese spread. Add in Large eggs, one at a time, beating well after each addition. Mix will be smooth and glossy. Drop dough by teaspoonfuls onto prepared cookie sheet. Bake at 400 degrees F for 15-20 mins. till puffed and golden. Remove from cookie sheets. Cold slightly; make small slit in side of puffs to release steam and prevent sogginess. Cold completely.
  3. In small bowl, combine remaining cheese spread, olives and sherry; blend till smooth and fluffy. Slit puffs; remove any soft filaments of dough.
  4. Fill with scant teaspoonfuls of cheese mix.
  5. Makes 18 appetizer puffs.
  6. A wonderful holiday appetizer including a rich cheese puff pastry.
