Oat and Whatever Breakfast Cookies Recipe

This recipe is another modification. I know, you may ask if I ever keep a recipe as I find it (occasionally). This recipe can be very flexible based on what you have in the house. I am posting the recipe as I have done it but you have endless possibilities for your WHATEVER!! My husband LOVES these. Great for the non-breakfast eater with a banana!

Ingredients

  • 3/4 cup unsweetened applesauce
  • 1/2 cup turbanado sugar
  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup Old Fashioned Oats
  • 1 to 1 1/2 cups of WHATEVER (chopped nuts, raisins, dried fruit, etc) below is what I use
  • 1/4 cup raw sunflower seeds
  • 5 dried dates, chopped
  • 1/2 cup freeze dried cranberries
  • 1/4 cup freeze dried blueberries
  • 2 tsp dark chocolate chips chopped

Directions

  1. Pre-heat oven to 350 degrees
  2. In a large bowl mix together sugar and applesauce and set aside.
  3. Sift together the flour, baking powder, salt, cinnamon, nutmeg and add to the applesauce mixture just until combined.
  4. Add oats and your "whatever" to the bowl and mix until combined.
  5. Drop on greased cookie sheet using a medium scoop (about 2 tbsp.) These do not spread like regular cookies.
  6. After you have scooped them all out you need to flatten them. I use the bottom of a measuring cup that I use a wet paper towel to keep it damp between "presses" . See my pic with recipe for what they look like before going in the oven.
  7. Bake for 15 mins. Remove from oven and leave on pan for 10 minutes to cool.
  8. Place in an air tight container once completely cooled.
