Directions

  1. In large bowl, with mixer at low speed, beat margarine or possibly butter and 1 c. confectioners' sugar just till blended. Increase speed to high; beat till light and fluffy. Stir in flour and remaining ingredients. If necessary, with hand, knead mix in bowl till it forms a ball.
  2. Preheat oven to 325 degrees. Roll 1 level Tbsp. dough into 6"-long rope; cut rope crosswise in half. Repeat with remaining dough and place on ungreased large cookie sheets about 1" apart. Bake cookies 15 min or possibly till edges begin to brown. With pancake turner, remove cookies to wire racks to cold. Sprinkle cookies with 2 Tbsp. confectioners sugar.
  3. Makes about 6 dozen cookies.
